Terroir: the fine sands of Rayas

The vineyard of Château Rayas is north-east facing, benefiting from natural freshness that brings tension, balance and elegance to the wines. Unlike the classic image of Châteauneuf-du-Pape, the soil here is exclusively sandy, without rolled pebbles, giving Grenache Noir crystalline finesse, an airy texture and singular depth.

Most of the vines are planted to Grenache Noir for the reds, complemented by Grenache Blanc and Clairette for the whites. This unique terroir, surrounded by woods and protected from Mediterranean climatic extremes, gives birth to wines of unmistakable personality, marked by fruit purity, freshness and delicacy.

Viticulture and artisanal vinification

Viticulture is carried out with absolute respect for nature: no chemical inputs, extremely low yields and meticulous attention to each bunch. Harvesting is done by hand in order to preserve grape integrity and the natural finesse of the fruit.

The grapes are vinified as whole clusters, without destemming. Fermentations are long, spontaneous and driven exclusively by indigenous yeasts. Ageing takes place in very old foudres and vats, without new oak, in order to preserve fruit purity, aromatic subtlety and transparent terroir expression.

Red: fresh cherry, wild strawberry, raspberry, redcurrant, rose petal, blood orange and bright small red berries.

Spices and nuances: fine herbs, sweet spices, delicate pepper, thyme, light tea, fine liquorice and floral notes.

Wine style

Château Rayas Rouge is distinguished by a delicately translucent colour and an immediately recognisable aromatic brightness: fresh cherry, wild strawberry, fine herbs, sweet spices and floral notes. The palate seduces with its silky texture, mineral tension and vibrant, almost aerial length.

Château Rayas Blanc, produced in extremely limited quantities, offers crystalline salinity, chalky density and remarkable precision. In both colours, Rayas favours light, purity and elegance, producing deeply moving wines capable of evolving with grace.

Service, pairings and ageing potential

Château Rayas Rouge reveals itself fully after around 8 years in bottle and can age harmoniously for up to 30 years in great vintages. Service requires delicacy: a temperature around 15 to 16°C, measured aeration and large glasses help preserve its aromatic brightness.

Its finesse pairs beautifully with roast poultry, pigeon, veal with herbs, delicately spiced lamb, noble mushrooms or refined Mediterranean cuisine. The white pairs ideally with noble fish, shellfish, creamy poultry dishes, aged cheeses and dishes with delicate textures.
