Vinification and ageing
Each grape variety is vinified separately, in large concrete or stainless-steel vats, in order to preserve its identity and its role in the final blend. Macerations are long, with regular pump-overs, encouraging gentle, progressive and balanced extraction.

Wine style

Beaucastel reds have significant ageing potential, often 15 to 30 years depending on the cuvée and vintage. They are best served around 16 to 18°C, with aeration adapted to their age. Great vintages develop notes of truffle, fine leather, forest floor, melted spices and dried herbs with time.
The whites are generally best served around 11 to 13°C and pair beautifully with noble fish, poultry, lobster, shellfish, refined Mediterranean cuisine and aged cheeses. The reds pair with roasted lamb, game, dry-aged beef, truffle-based dishes, delicate tajines and meats with Provençal herbs.
