When biodynamics meets Vaudois finesse

Nestled in Féchy on the Vaudois Côte overlooking Lake Geneva, Domaine La Colombe embodies four generations of precision and elegance in Swiss winemaking. Under the visionary guidance of Raymond Paccot, the estate began its biodynamic conversion in the late 1990s, achieving Demeter certification in 2000.

Today, Laura Paccot (and for some cuvées Violaine Paccot) continues this philosophy of balance and respect for living ecosystems.

Terroir — A mosaic of Vaudois soils

The estate spans 20 hectares of terraced vineyards with varied exposures. The soils are a mix of clay, limestone, and gravel, allowing for a nuanced interpretation of each site. Each cuvée aims to express this diversity with precision and subtlety, free from oenological artifice.

Viticulture — Rigorous biodynamics

  • Mechanical soil work, no herbicides or synthetic products
  • Exclusive use of biodynamic preparations (500, 501, herbal teas of horsetail, nettle, yarrow), copper and sulfur
  • Hand harvesting, sorting in the vineyard, small containers to preserve grape integrity

Vinification — Transparency and finesse

  • Spontaneous fermentations with indigenous yeasts
  • Gentle pneumatic pressing for clean juice
  • Ageing adapted to each wine: stainless steel, large foudres, or light oak
  • Minimal filtration, sulfur used only if necessary

Style — Purity, tension, elegance

La Colombe wines are defined by their vibrant balance and crystalline finesse. The estate’s flagship grape, Chasselas, is expressed with saline precision, airy texture, and luminous freshness. The reds are light and detailed, focusing on depth over power.

Signature cuvées

La Colombe Cuvée Sélectionnée — Chasselas A symbol of the estate. From old vines, stainless steel ageing. Floral and lemon notes, saline tension, airy texture.

Pinot Gris “La Côte” Gentle pressing, natural fermentation, ageing on fine lees. Pear, gentle spice, tension and citrus finish.

La Colombe Rouge Réserve Blend of Merlot, Gamaret, Syrah (sometimes Gamay). Partial barrel ageing. Silky tannins, ripe fruit, structural elegance.

Pinot Noir Partially destemmed whole clusters, long fermentation, light ageing. Cherry, redcurrant, undergrowth, saline sap.
