Jean-François Ganevat — The free and vibrant expression of the Jura

In Rotalier, in the southern Jura, Jean-François Ganevat holds a singular place among France’s most sought-after vignerons. His wines combine a highly detailed reading of Jura parcels, demanding vineyard work and a low-intervention approach in the cellar.

Trained in Burgundy, notably in Chassagne-Montrachet, he brought back to the Jura a precise sense of vinification and élevage, applied to deeply personal terroirs. Chardonnay, Savagnin, Poulsard, Trousseau, Pinot Noir and ancient grape varieties give rise to rare, living wines with an immediately recognisable identity.

The spirit of the domaine

Domaine Ganevat embodies an artisanal and instinctive vision of wine: chiselled, saline, long-lined whites, airy reds and highly individual cuvées, always driven by fruit energy and a vivid sense of place.

History

The Ganevat family has been rooted in the Jura for several generations. Jean-François took over the family domaine in the late 1990s, after a defining experience in Burgundy, and gradually developed a highly personal approach based on old vines, massal selections, forgotten grape varieties and natural vinifications.

His sister Anne Ganevat is also closely involved, particularly in certain négociant cuvées. The recent history of the domaine has seen an evolution in ownership, yet the Ganevat name remains associated with an instantly recognisable aesthetic: rare, free, sensitive and deeply Jura-driven wines.

Terroir

The vineyards lie around La Combe de Rotalier, in the southern Jura, on complex soils combining marl, limestone and clay. This geological mosaic gives the wines their natural relief: a saline thread, a stony feel, a firm line and remarkable persistence.

The whites, made from Chardonnay and Savagnin, strongly express this marl-influenced identity, combining fruit clarity, mineral length and deep texture. The reds are more delicate, favouring aromatic transparency, fine-grained tannins and a natural sense of grace.

Viticulture and vinification

The vineyards are cultivated with great rigour, in a spirit close to biodynamics, with precise manual work and particular attention paid to soil life. Yields remain low and the grapes are harvested by hand at balanced ripeness, in order to preserve their natural harmony.

In the cellar, fermentations take place naturally with indigenous yeasts. Élevage is often long, in old barrels, demi-muids or neutral vessels, with very limited sulphur use depending on the cuvée and vintage. The aim is not to standardise the wine, but to let each cuvée find its own rhythm, texture and vibration.

Wine style

The wines of Jean-François Ganevat stand out for their purity of expression, energy and deeply living character. The whites can show considerable density without heaviness, with notes of citrus, white fruit, almond, chalk and salinity.

The reds, made mainly from Poulsard, Trousseau or Pinot Noir, favour finesse over power. They reveal limpid red fruit, very fine tannins, a floral touch and, at times, a delicate spicy dimension. These are wines of movement, emotion and personality.

Emblematic cuvées

Les Grands Teppes Vieilles Vignes: a deep, ample and long Chardonnay, one of the domaine’s major signatures.

Les Chalasses Vieilles Vignes: a taut, pure and vertical white wine, shaped by the energy of Jura marl soils.

La Gravière: a Chardonnay of great finesse, often sought after for its balance between brightness, substance and length.

Cuvée du Pépé: a rare and emblematic cuvée from old vines, produced in very limited quantities.

Trousseau, Poulsard and ancient-variety cuvées: singular reds and blends, free in spirit, floral and delicately spiced.

Cellaring and food pairings

Ganevat’s great white wines have excellent ageing potential. Depending on the cuvée and vintage, they can evolve towards notes of dried fruit, preserved lemon, gentle spice, warm stone and subtle smoky nuances.

At the table, the whites pair beautifully with noble fish, shellfish, creamy poultry dishes, morels, Jura cheeses and refined yet expressive cuisine. The reds are particularly suited to roast poultry, veal, mushrooms, artisan charcuterie and delicately spiced dishes.
