Officially recognized as an appellation in 1923, Mercurey covers approximately 650 hectares of vineyards — making it one of the largest appellations in Burgundy. Around 85% of plantings are Pinot Noir, with the remaining 15% in Chardonnay.

The vines thrive on well-drained clay-limestone soils with diverse exposures and altitudes (230–320 m). A continental climate — warm summers, cold winters and marked diurnal shifts — promotes slow, balanced ripening and vibrant aromatics.
