Set at approximately 450 metres altitude, the vineyards rest on thin Jurassic limestone soils, bringing natural freshness, purity and mineral definition to the wines. Many parcels are planted with old vines, some between 35 and 70 years of age, selected from historic massal selections and cultivated with meticulous care.

Work in the vineyard is conducted with a strong respect for the natural balance of the site. Grapes are harvested by hand and carefully sorted before fermentation with indigenous yeasts.
