Domaine Gauby — The Living Excellence of Roussillon

Located in Calce, north-west of Perpignan in the Côtes Catalanes, Domaine Gauby is one of the leading names of contemporary Roussillon. Founded by Georges Gauby, then brought to its highest level by Gérard and Lionel Gauby, the estate embodies a demanding, sensitive and deeply respectful vision of southern French viticulture.

Renowned for its biodynamic approach and its precise work on the great terroirs of Calce, Domaine Gauby has helped reshape the image of the region. Its wines combine southern ripeness, natural lift, refined texture and remarkable balance, in a style far removed from the excesses of concentration that once marked parts of Roussillon.

The spirit of the estate

A visionary estate from the south of France, where Mediterranean character is shaped by finesse, restraint and clarity. Gauby’s wines express the complexity of Calce’s soils, the luminous nature of Roussillon and a rare sense of balance, in a style that remains sincere, elegant and deeply rooted in place.

Terroir: Calce, between sea, mountains and garrigue

The village of Calce, set between the Mediterranean and the foothills of the Pyrenees, offers a remarkable geological mosaic of limestone, marl, schist and clay. Combined with the influence of the tramontane wind, this diversity gives the wines their aromatic relief, natural definition and distinctive southern identity.

The parcels, planted between 150 and 300 metres above sea level, are surrounded by forests, garrigue and orchards. This preserved environment contributes to the natural balance of the vineyard, allowing the grapes to reach full maturity while retaining brightness, clarity and length.

Terroir expression: Calce, Côtes Catalanes, limestone, schist, marl, clay, garrigue, tramontane, dark fruit, spices, Mediterranean flowers and long, mineral-edged finishes.

Gauby signature: biodynamics, balance, fine tannins, southern elegance, old vines and remarkable drinkability.

A pioneer of biodynamics

From the 1990s onwards, Gérard Gauby initiated a decisive change by adopting organic and then biodynamic practices. Chemical inputs were abandoned, the soils regained vitality, and vineyard work became increasingly focused on biodiversity, manual labour and respect for natural cycles.

This philosophy allows the estate to produce wines that feel authentic rather than demonstrative. The aim is not power for its own sake, but the most faithful expression of Calce: wines with presence, finesse and a strong sense of origin.

Style of the wines

The wines of Domaine Gauby stand out for their controlled intensity, graceful texture and aromatic purity. The reds combine ripe fruit, fine structure and a savoury southern character. The whites, even rarer, are marked by tension, salinity and a refined expression that places them among the finest white wines of the region.

Gauby’s style is built on equilibrium: wines that are generous without heaviness, expressive without excess and capable of ageing while remaining immediately pleasurable. This approach has made the estate one of the great signatures of Roussillon.

Aromatic profile

Reds: dark fruit, blackberry, black cherry, garrigue, pepper, liquorice and subtle smoky notes.

Whites: white flowers, stone fruit, citrus, fine herbs, warm stone and saline accents.

Overall impression: refined southern wines, combining ripe fruit, elegance, length and a clear sense of place.

Emblematic cuvées

Reds

Muntada: the estate’s iconic cuvée, mainly based on Grenache, Carignan and Syrah. Deep, elegant and energetic, it reveals dark fruit, gentle spices and a vibrant mineral frame.

Vieilles Vignes Rouge: a broad, refined and complex wine, expressing the depth of old vines and the nobility of Calce’s finest terroirs.

Calcinaires Rouge: a more accessible cuvée, marked by supple texture, bright fruit and natural balance.

Whites

Calcinaires Blanc: a precise blend of Grenache Blanc, Macabeu, Vermentino and Chardonnay, driven by white flowers, stone fruit and a mouth-watering finish.

Vieilles Vignes Blanc & Coume Gineste: complex, age-worthy whites with depth, texture and strong mineral character.

A visionary estate

Today, Lionel Gauby continues the family philosophy with the same discipline: crafting wines that convey the raw beauty of the Catalan landscape without heaviness or artifice. The estate remains guided by a constant search for balance, authenticity and sincere expression of place.

The wines of Domaine Gauby are among the most sought-after in southern France. They seduce through their character, ageing capacity and luminous identity, while remaining faithful to the discreet elegance that defines the estate.

Cellaring and food pairings

The great cuvées of Domaine Gauby offer excellent ageing potential. The reds develop notes of spice, garrigue, preserved dark fruit and subtle smoke, while the whites gain texture, persistence and savoury complexity over time.

The reds pair beautifully with lamb, duck, grilled meats, Mediterranean dishes, roasted vegetables and mature cheeses. The whites are well suited to noble fish, shellfish, creamy poultry dishes, goat cheeses and southern cuisine with fine herbs.
