Philosophy and vinification

The vines are worked traditionally and by hand, without the pursuit of stylistic effect or formal certification, but with deep respect for living soils. Yields are deliberately low in order to favour concentration, balance and precise expression of each parcel.

Fermentations are slow, carried out with indigenous yeasts, and ageing takes place in old barrels, without new oak, for around 18 months, sometimes longer depending on the vintage. Nothing is rushed: wines are bottled only when they have found their balance.

Aromatic profile

Fruit: lemon, preserved lemon, green apple, pear, white fruits, white peach and citrus zest.

Flowers and nuances: white flowers, linden blossom, discreet honey, fresh almond, fine spices and lightly smoky notes.

Mineral expression: flint, chalk, oyster shell, salinity, limestone tension and a long iodine-tinged finish.

Wine style
