Domaine Stéphane Tissot is one of the great contemporary references of the Jura, celebrated for its biodynamic approach, precise parcel-by-parcel vinifications and remarkable ability to express the full diversity of Arbois: topped-up Chardonnay, Savagnin under flor, Vin Jaune, Crémant du Jura, Poulsard, Trousseau and Pinot Noir.
Domaine Stéphane Tissot — The Jura in Its Purest Expression
Domaine Stéphane Tissot, officially known as Domaine André et Mireille Tissot, stands among the most influential estates in the modern Jura. Based in Montigny-lès-Arsures, near Arbois, the domaine has become a benchmark for wines that are vivid, precise and deeply rooted in their place of origin.
Since Bénédicte and Stéphane Tissot took over the family estate in 1990, the domaine has played a decisive role in the renewed recognition of Jura wines. Its identity is built on biodynamic farming, native grape varieties, parcel expression and a rare ability to move naturally between topped-up wines, wines aged under flor, Vin Jaune, sparkling wines, macerations and fine, energetic reds.
The spirit of the estate
Stéphane Tissot does not seek to impose a single style on the Jura. His work is a complete reading of the region: marl, limestone, local grape varieties, oxidative traditions, ouillé precision, vibrant reds and long-ageing Savagnin. Each cuvée is conceived as a clear expression of soil, grape variety and vintage.
History
The estate was founded in 1962 by André and Mireille Tissot in Montigny-lès-Arsures, one of the historic villages of the Arbois appellation. Initially modest in size, the family domaine gradually expanded across a wide mosaic of Jura terroirs.
In 1990, Bénédicte and Stéphane Tissot took over and profoundly transformed the estate. Through organic farming, then biodynamics, indigenous yeasts, parcel-based vinification and a renewed focus on Jura’s traditional grapes, the domaine became one of the symbols of the region’s renaissance. Today, its wines are sought after by sommeliers, collectors and passionate wine lovers for their clarity, energy and singular personality.
Terroir and biodynamic viticulture
The domaine works an important mosaic of vineyards around Arbois and Montigny-lès-Arsures, with soils of marl, limestone, clay and scree. These varied geological profiles are central to the identity of the wines, giving them drive, mineral depth, savoury complexity and a distinctly Jura character.
Stéphane Tissot converted the estate to organic farming in 1999 before moving to Demeter-certified biodynamics in 2004. Soil work, biodynamic preparations, controlled yields and constant observation of each parcel allow the domaine to produce grapes of remarkable vitality. This viticultural precision is the foundation of wines that feel both free and exacting.
Winemaking and wine style
In the cellar, the approach is low-intervention but never approximate. Fermentations are generally carried out with indigenous yeasts, ageing is adapted to each cuvée, and the choice of vessel — barrel, demi-muid, amphora, concrete or vat — is guided by the desired expression rather than by a fixed recipe.
The white wines range from chiselled, topped-up Chardonnay to powerful Savagnin aged under flor. The reds, produced from Poulsard, Trousseau and Pinot Noir, often favour finesse, aromatic purity and flowing texture. The oxidative wines, especially the Vin Jaune, combine spice, depth and remarkable longevity. Few estates express the many faces of the Jura with such breadth and coherence.
Emblematic cuvées

Savagnin “Les Molates” — a topped-up Savagnin with structure, freshness and strong varietal personality.
Vin Jaune “La Vasée” — a deep, spicy and age-worthy wine aged under flor, with notes of walnut, curry, almond and salt.
Vin Jaune “La Mailloche” — one of the domaine’s most powerful expressions of Savagnin under flor, built for long cellaring.
