From the clay-limestone soils of Arbois and crafted according to biodynamic principles, this Savagnin is aged for more than six years under flor in old barrels, without topping up — the most traditional expression of Jura winemaking. This long oxidative ageing yields a wine of remarkable depth, complexity and distinctive aromatic character.
Tasting Notes
Nose
A classic bouquet of Savagnin aged under flor: fresh walnut, gentle curry spice, dried apple, orange zest, saffron, forest floor and subtle white mushroom. Deep, expressive and unmistakably Jura.
Palate
Broad, structured and vibrant, supported by a lively acidity that balances the natural richness of oxidative ageing. The texture shows intensity and precision, with superb energy and definition.
The finish is long, saline and chalky, marked by walnut, spice and a deep, meditative complexity. A powerful, characterful and truly monumental Savagnin sous voile.
