Terroir
The Caillottes cuvée comes from one of the most emblematic soil types of the Sancerre appellation, composed primarily of very stony limestone soils, locally known as “caillottes.” Located in the area of Chavignol, these parcels benefit from excellent natural drainage, producing wines of striking precision, tension, and mineral purity. The continental Loire climate, with moderate summers and cool nights, allows for slow ripening, preserving freshness and aromatic clarity. Vinified by François Cotat using a traditional, artisanal approach, unfined and unfiltered, this wine delivers a frank and authentic expression of its terroir.
Tasting Notes
Appearance & Nose:
Pale lemon-yellow color with silvery highlights. The nose is pure and expressive, offering aromas of fresh citrus, lemon zest, green apple, and white flowers, complemented by notes of flint, wet stone, and a subtle smoky edge.
Palate & Finish:
The palate is linear, tense, and vibrant, driven by precise acidity and a sharply defined mineral backbone. The expression is crystalline and unadorned, allowing the terroir to speak with clarity and sincerity. The finish is long, saline, and persistent, highlighting excellent aging potential and confirming this cuvée as one of the great references of Sancerre.
