Domaine Stéphane Tissot — Jura in All Its Truth

Domaine Stéphane Tissot, officially known as Domaine André et Mireille Tissot, is one of the most important references in contemporary Jura wine. Based in Montigny-lès-Arsures, near Arbois, the estate embodies a free, precise and deeply living vision of the Jura vineyard.

Founded in 1962 by André and Mireille Tissot, the estate was taken over in 1990 by Bénédicte and Stéphane Tissot. Since then, it has become a major force in biodynamics, parcel-by-parcel vinification and the expression of Jura’s historic grape varieties: Chardonnay, Savagnin, Poulsard, Trousseau and Pinot Noir.

The spirit of the estate

A complete reading of the Jura: biodynamics, parcel diversity, free yet precise vinifications, local grape varieties, topped-up wines, wines aged under flor, sparkling wines, maceration wines, Vin Jaune and single-vineyard cuvées. Stéphane Tissot does not seek one single style, but the truth of each soil, each grape variety and each vintage.

History: a Jura revolution led by the family

The estate was founded in 1962 in Montigny-lès-Arsures by André and Mireille Tissot. Originally modest in size, the family domaine gradually expanded around the great terroirs of Arbois and its surrounding villages.

In 1990, Bénédicte and Stéphane Tissot officially took over. Stéphane Tissot then profoundly transformed the estate, with increased attention to soils, native grape varieties, natural vinifications and the identities of individual lieux-dits.

This trajectory has made the domaine one of the symbols of the Jura renaissance. Its reputation now reaches far beyond the region: Tissot wines are sought after by sommeliers, wine merchants and collectors for their energy, diversity and ability to reveal the many faces of the Jura.

Terroirs: Arbois, marl, limestone and lieux-dits

The estate now covers around 46 to 50 hectares depending on the source, an important size for the Jura. The vines are spread around Arbois and Montigny-lès-Arsures, on varied terroirs of marl, limestone, clay and scree, which give the wines their tension, salinity and strong personality.

The estate places particular emphasis on a mosaic of emblematic lieux-dits and terroirs, including Les Bruyères, La Mailloche, En Barberon, Les Graviers, Curon and the terroirs of Château-Chalon. This diversity explains the depth of the range and the multiplicity of expressions.

Organic and biodynamic viticulture

Stéphane Tissot converted the estate to organic farming in 1999, before moving further towards Demeter-certified biodynamics in 2004. This ambitious approach, especially for a Jura estate approaching fifty hectares, requires considerable vineyard work, strong human presence and constant observation of natural cycles.

Soil work, biodynamic preparations, controlled yields and close attention to living balance make it possible to obtain precise, expressive and energetic grapes. This viticultural foundation explains the vitality of the wines, their transparency and their ability to move across many styles without losing their identity.

Aromatic profile

Topped-up Chardonnay: ripe lemon, yellow apple, pear, white flowers, hazelnut, chalk, wet stone, fine spices, salinity and tension.

Savagnin and wines aged under flor: fresh walnut, mild curry, saffron, dried apple, citrus zest, almond, spice, salt and long persistence.

Reds: strawberry, raspberry, redcurrant, morello cherry, pepper, peony, dried herbs, fresh earth and airy texture.

Overall impression: pure, vibrant and mineral wines, capable of being crystalline, free, spicy, oxidative or deeply saline depending on the cuvée.

Vinification: freedom, precision and diverse vessels

Vinification at Tissot is based on controlled freedom. Fermentations are generally carried out with indigenous yeasts, inputs are kept to a minimum, and ageing is adapted to each grape variety, each soil and each intended style.

Fermentations: indigenous yeasts, few or no inputs depending on the cuvée and vintage.

Ageing: barrels, demi-muids, amphorae, concrete vats or other vessels adapted to the desired profiles.

Styles: topped-up wines, wines aged under flor, Vin Jaune, Crémant du Jura, macerations, light reds and parcel-based cuvées.

Philosophy: intervene as little as possible, but with extreme precision, in order to let the soil speak without losing the clarity of the wine.

Wine style

The Tissot style cannot be reduced to a single aesthetic. The topped-up Chardonnay wines can be taut, saline and almost Burgundian in precision, while retaining the Jura vibration of marl and limestone. The Savagnin wines explore the full range of the grape variety: topped-up, under flor, Vin Jaune, powerful, spicy or crystalline.

The reds, made from Poulsard, Trousseau and Pinot Noir, often favour finesse, drinkability, pure fruit and energy. The oxidative wines, especially Vin Jaune, show remarkable depth, aromatic power and longevity. This diversity makes the estate a living encyclopedia of the Jura.

Topped-up whites and parcel cuvées

Chardonnay “Les Bruyères”: an intense, saline and precise cuvée, often regarded as one of the estate’s great limestone expressions.

Chardonnay “En Barberon”: a long, elegant and fine wine, driven by mineral depth and very consistent texture.

Chardonnay “Les Graviers”: a taut, stony expression marked by freshness, salinity and precision.

Savagnin “Les Molates”: a topped-up Savagnin, more direct and structured, combining freshness, tension and aromatic personality.

Flor, Vin Jaune and reds
