Terroir
Sourced from the single parcel “Le Mont-Aigu” in Chouilly, a Grand Cru village on the Côte des Blancs. The vineyard lies on deep Cretaceous-era chalk soils, imparting remarkable mineral tension and saline elegance to the Chardonnay. The ideal exposure and meticulous, terroir-driven viticulture highlight the purity and finesse of this exceptional site.
Winemaking
Parcel-based vinification in stainless steel tanks and oak barrels. Partial malolactic fermentation to preserve the linearity and precision of the vintage. Aged on fine lees, followed by extended aging on the lees after bottling. Extra Brut dosage (approx. 2 g/L) enhances the wine’s brightness and verticality. Bottled with minimal filtration to retain texture and aromatic depth.
Tasting Notes
The nose reveals notes of lemon zest, wet chalk, green apple, and white flowers, with a subtle hint of brioche from the élevage. On the palate, it is razor-sharp and tension-filled, driven by chalky minerality and vibrant acidity. The bubbles are fine and delicate, extending into a clean, savory finish marked by citrus peel and flinty nuances. A pure, vibrant Blanc de Blancs combining precision with sophistication.
