Single-parcel Blanc de Noirs from Romery, grown biodynamically on clay-limestone soils. No herbicides, hand-harvested, traditional basket press. Natural vinification, fermentation in oak barrels, long lees aging. No dosage added (brut nature). Extremely limited production.
Nose: Pure and expressive with ripe pear, white blossom, almond paste, and chalky undertones. Light honeyed complexity on aeration.
Palate: Straight, vibrant entry. Creamy texture meets sharp limestone tension. Long finish evoking chalk dust, citrus zest, and a touch of noble bitterness.
