The vineyard of Château Rayas is north-east facing, benefiting from natural freshness that brings tension, balance and elegance to the wines. Most of the vines are planted to Grenache Noir for the reds, complemented by Grenache Blanc and Clairette for the whites. Viticulture and artisanal vinification
Viticulture is carried out with absolute respect for nature: no chemical inputs, extremely low yields and meticulous attention to each bunch. Harvesting is done by hand in order to preserve grape integrity and the natural finesse of the fruit.
The grapes are vinified as whole clusters, without destemming. Fermentations are long, spontaneous and driven exclusively by indigenous yeasts. Ageing takes place in very old foudres and vats, without new oak, in order to preserve fruit purity, aromatic subtlety and transparent terroir expression.
