History & Philosophy
Domaine Cassagne et Vitailles was established in 2015 by Pierre Cassagne, a native of the Languedoc, and Nicolas Seffusatti, a Bordeaux-trained oenologist. Their shared ambition was to showcase the exceptional potential of the Terrasses du Larzac through wines that combine Mediterranean character with precision and freshness.
From the beginning, the project aimed to produce wines capable of standing alongside top French benchmarks, emphasizing altitude, natural balance, and meticulous parcel selection rather than extraction or excess power.
Terroir & Vineyards
The vineyards are located in the elevated zones of the Terrasses du Larzac, a sub-appellation of the Languedoc known for its cooling influences.
Key terroir characteristics include:
Significant altitude, bringing cooler night temperatures
Large diurnal temperature shifts
Limestone and clay-limestone soils with rocky scree
These conditions help preserve acidity and aromatic complexity, while allowing full phenolic ripeness.
The domaine works primarily with old vines and low-yielding parcels.
Viticulture
Careful, parcel-by-parcel vineyard management
Sustainable and environmentally conscious practices
Low yields
Hand harvesting
Strict fruit selection
The focus is on achieving optimal ripeness while maintaining freshness and balance.
Winemaking
Fermentation in concrete and stainless steel tanks
Gentle extraction methods
Ageing in large oak vessels (foudres) and demi-muids depending on cuvée
Emphasis on texture refinement rather than heavy oak influence
The winemaking philosophy seeks elegance, structure, and clarity of terroir expression.
Wine Style
Domaine Cassagne et Vitailles wines are known for:
Precision and purity
Fine-grained tannins
Remarkable freshness for a southern French appellation
Aromas of dark fruit, Mediterranean herbs, and spice
Strong ageing potential
The style is often described as structured yet elegant, avoiding the overly powerful stereotype sometimes associated with Mediterranean wines.
Key Wines
Combarels – the flagship cuvée, complex and structured
Clas Mani – more concentrated and ambitious single-parcel selection
