Château Canon 2006 — Saint-Émilion Grand Cru
This Château Canon 2006 embodies the refined limestone-driven style of Saint-Émilion, with an expression that is more classic than demonstrative. Based mainly on Merlot, complemented by Cabernet Franc, it favours balance, textural finesse, aromatic freshness and measured depth rather than excessive power.
After nearly twenty years of evolution, the 2006 vintage is entering a particularly interesting phase, between still-present fruit and the first tertiary aromas. Black cherry, cassis, wild strawberry, floral notes, sage, cocoa, blond tobacco, fine earth and a mineral touch shape an elegant, serious Saint-Émilion, now beautifully suited to the table.
Terroir: the limestone plateau of Saint-Émilion
Château Canon is one of the historic names of Saint-Émilion, renowned for its limestone terroirs, which give the wines a straight structure, natural freshness and distinctive elegance. Merlot brings flesh, dark fruit and roundness, while Cabernet Franc reinforces aromatic precision, floral freshness and tension on the finish.
In the 2006 vintage, the wine shows a classic profile: less solar than 2005 or 2009, but with fine definition, a saline frame, now softened tannins and complexity that gradually reveals itself with aeration. This is a Canon of finesse, nuance and balance.
Tasting notes
Appearance: deep ruby red with garnet reflections, showing discreet evolution at the rim and fine visual presence for a wine approaching twenty years of age.
Nose: elegant and evolving, with black cherry, cassis, wild strawberry, kirsch, orange peel, violet, sage, blond tobacco, cocoa, fine undergrowth and a noble touch of tar. With aeration, nuances of cedar, graphite, fresh mushroom, fine leather and warm stone may appear.
Palate: medium-bodied, supple and beautifully balanced, with still-present dark fruit, melted yet structuring tannins, fine salinity and a fresh, precise, lightly mineral finish. The wine charms through finesse rather than power, with elegant persistence over cassis, cherry, fine herbs and tertiary notes.

Progressive opening is recommended, with gentle aeration rather than prolonged decanting, in order to preserve the finesse of the fruit, the tertiary nuances and the delicate limestone frame of the wine.
