Terroir
Château Canon benefits from an exceptional terroir on the limestone plateau of Saint-Émilion. The estate’s limestone and clay-limestone soils bring natural freshness, refined texture and the mineral tension that defines the finest wines of the appellation.
The 2016 vintage is one of Château Canon’s great recent successes. It combines perfectly ripe fruit with a structure of remarkable precision, without excess or heaviness. Merlot brings flesh and silky elegance, while Cabernet Franc adds verticality, freshness and aromatic complexity.
Tasting notes
Nose:
The bouquet is pure and deep, carried by notes of black cherry, blackberry, fresh plum, violet, graphite and fine spices. Nuances of wet stone and liquorice underline the wine’s limestone-driven and refined character.
Palate & Finish:
The palate is dense, precise and remarkably balanced, with a silky texture, fine tannins and perfectly integrated freshness. The finish is long, straight and refined, lingering on dark fruit, gentle spices, graphite and an elegant chalky minerality.
