Viticulture and vinification: tradition, patience and extended ageing
The domaine is based on traditional, mostly manual viticulture, with very low yields and constant attention to the natural ripeness of the grapes. The aim is not immediate power, but depth of substance and balance of fruit.
In the cellar, vinification follows a highly artisanal spirit, with fermentations in open cement vats and choices adapted to each vintage. Ageing, often very long, takes place in old barrels, foudres and demi-muids. Some cuvées may remain in the cellar for many years before bottling, without any search for standardisation.
