Coume Gineste comes from high-altitude hillside vineyards in the Roussillon, planted on schist and limestone soils that bring freshness and strong mineral expression. The vines benefit from significant day–night temperature variation, preserving acidity and aromatic clarity. The 2019 vintage, balanced and luminous, combines ripe Mediterranean fruit with remarkable precision, reflecting the natural, terroir-driven philosophy of Domaine Gauby.

Nose:
Fresh and expressive aromas of citrus, white peach, and pear, combined with notes of wild herbs, white flowers, and a distinctive mineral edge.

Palate & Finish:
The palate is vibrant and precise, with a taut, saline texture supported by lively acidity. The wine shows excellent balance between ripeness and freshness, unfolding with clarity and depth. The long, mineral-driven finish lingers on citrus zest, stone fruit, and subtle chalky notes. A serious, age-worthy southern white with remarkable finesse.
