From the beginning, Cécile Tremblay has oriented the domaine toward viticulture that respects the living world, with an organic foundation and the integration of biodynamic principles. Herbal teas, light ploughing, natural grass cover and observation of lunar cycles all contribute to an attentive, precise and deeply artisanal approach.
Harvesting is carried out exclusively by hand, with rigorous sorting in the vineyard and again in the cellar. This level of precision ensures that only perfectly healthy grapes are retained, capable of transmitting the energy of the place. The aim is never volume, but accuracy of expression, tannin finesse and aromatic vibration.

Natural vinification and precision ageing

Harvest: 100% manual, with rigorous sorting in the vineyard and cellar.
Fermentation: natural vinification, long macerations, gentle work on tannins and a search for aromatic precision.
Ageing: around 15 to 18 months in oak barrels, with the proportion of new oak adjusted according to the power and finesse of each cuvée.
