This Château-Chalon 2017 from Domaine Jean Macle embodies one of the noblest and most singular expressions of the Jura. Made from Savagnin and aged for many years under flor, this Vin Jaune combines aromatic power, saline tension, oxidative complexity and depth in a style that is austere, precise and fascinating.
Terroir: Château-Chalon, the great expression of Vin Jaune
The Château-Chalon appellation is entirely dedicated to Vin Jaune, produced from Savagnin on the limestone slopes of the Jura. This demanding terroir gives wines of remarkable stature, marked by salinity, aromatic intensity, persistence and exceptional ageing potential.
At Domaine Jean Macle, one of the historic references of the appellation, the expression remains faithful to a sober, profound and intensely gastronomic style. The 2017 vintage gives here a Château-Chalon that is still young, precise and firmly structured, with freshness that beautifully supports the aromatic richness brought by ageing under flor.
Tasting notes
Appearance: deep gold with luminous reflections, dense and brilliant, showing the characteristic brightness of great young Vin Jaune.
Nose: intense and complex, with fresh walnut, almond, sweet spices, curry, saffron, wax, citrus peel, dried apple, warm stone and a lightly iodine nuance.
Palate: dry, ample and structured, with deep substance, fine tension and remarkable persistence. The finish is long, saline, spicy and mineral, driven by the energy of Savagnin and the noble character of ageing under flor.

Nicolas Greinacher, in September 2025, describes the 2017 vintage as a Château-Chalon of great elegance, less powerful than the 2018 tasted alongside it, yet more refined. His review highlights a concentrated and highly detailed wine, with aromas of dried nuts, spices, dried chamomile and bread crust, carried by a refined and remarkably long finish.
