Ermitage Le Pavillon 2007 — M. Chapoutier
This Ermitage Le Pavillon 2007 from M. Chapoutier embodies one of the deepest and most sought-after expressions of Syrah on the hill of Hermitage. Sourced from the legendary Les Bessards sector, it combines power, mineral density, intense dark fruit and a structure built for long ageing, in a noble, dark and profoundly Rhône-driven style.
Terroir: Les Bessards, the granitic heart of Hermitage
The Les Bessards lieu-dit is one of the most emblematic sectors of Hermitage. Its granitic soils give Syrah a powerful, upright and intensely mineral expression, with deep tannins, impressive length and a remarkable ability to evolve over decades.
The 2007 vintage offers a slightly more accessible profile than the most massive years, while preserving the depth and nobility of the great Bessards terroir. The wine is dense, dark and structured, with rich substance, fine acidity and a long finish marked by rock, spice and dark fruit.
Tasting notes
Appearance: dark purple with garnet reflections, dense, deep and still very sustained.
Nose: powerful and complex, with crème de cassis, blackberry, black plum, violet, black truffle, pepper, graphite, cold steel and crushed rock. With aeration, nuances of liquorice, fine leather, smoke and dark spices appear with intensity.
Palate: dense, tannic and rich, with deep dark fruit, firm structure and fine acidity supporting the whole. The finish is substantial, mineral and persistent, carried by the power of Syrah, the granitic nobility of Les Bessards and considerable ageing potential.
