A great white Burgundy crafted from Chardonnay, the 2017 Corton-Charlemagne by Philippe Pacalet embodies the power and elegance of this legendary Grand Cru terroir. Precise, vibrant and mineral, it is an exceptional wine with remarkable aging potential.
Vinification & Aging
- Fermentation with indigenous yeasts.
- Vinification without aggressive settling or technical intervention.
- Aged in oak barrels for 15 to 18 months, without racking or filtration.
- Minimal sulfur, used only at bottling if necessary.
Tasting Notes
- Color: Bright pale yellow with golden highlights.
- Nose: A pure bouquet blending fresh citrus, white flowers, chalk and a subtle smoky note.
- Palate: Ample, linear and tense. Dense texture balanced by crystalline acidity and fine salinity. Long, persistent finish with remarkable precision.
- Style: A vertical, energetic and pure wine — both ample and chiselled.
Food Pairing
- Ideal with noble fish (sea bass, turbot, sole), shellfish, lobster or langoustine.
- Superb with Bresse chicken in cream sauce or morel risotto.
