Terroir & Winemaking
The Les Cailles Premier Cru is located in the southern part of Nuits-Saint-Georges, just below the famous Les Saint-Georges vineyard. The name “Cailles” refers to the small limestone pebbles found in its soils. The vineyard rests on well-drained, stony and limestone-rich soils with a relatively thin topsoil layer, contributing to finesse, aromatic precision and a pronounced mineral character. Compared to some of the more powerful climats of the appellation, Les Cailles is often noted for its balance and elegance.
Domaine Robert Chevillon practices traditional viticulture with controlled yields and careful grape selection. Vinification is classical, with fermentation aimed at preserving purity of fruit and terroir expression, followed by aging in French oak barrels with a moderate proportion of new oak. The 2020 vintage in Nuits-Saint-Georges was warm and early, producing healthy, concentrated grapes with ripe tannins while maintaining structural freshness.

Expressive and precise, showing aromas of red and dark cherry, raspberry and subtle floral hints, complemented by fine spice and discreet earthy undertones.
Palate:
Medium to full-bodied, structured yet refined, with ripe but well-integrated tannins. The limestone soils impart a clear mineral backbone, giving the wine tension and clarity alongside its generous fruit core.
