Today, the de Surrel and Bouygues families carry this heritage forward.   • plant-based teas and natural treatments,
  • 100% manual harvest with meticulous sorting,

  • certified organic viticulture.

Winemaking & Ageing – Precision, Classicism & Control

In the cellar, vinifications are carried out on a parcel-by-parcel basis, striking a balance between tradition and contemporary precision:

  • partial destemming depending on the vintage and cuvée,
  • fermentations in wooden or concrete vats,
  • gentle, measured punch-downs and pump-overs,
  • 18–24 months of ageing in French oak barrels,
  • up to 50% new oak for the Grands Crus, always perfectly integrated.

The goal is to allow each cru to speak with clarity: the structure, breed and mineral backbone of the terroir are placed at the centre of the wine, not the élevage itself.
