Domaine Jean-Marc Boillot – Burgundian Duality, Precision and Brilliance

Located in Puligny-Montrachet, Domaine Jean-Marc Boillot embodies the refined duality of Burgundy: the racy, mineral-driven whites of the Côte de Beaune, and the structured yet elegant Pinot Noirs of Volnay and Pommard.

Descended from a historic winemaking family and the grandson of Étienne Sauzet, Jean-Marc Boillot founded his estate in 1985 after working at the family domaine. His style — precise and contemporary — remains deeply rooted in respect for terroir. Today, his daughter Lydie Boillot is gradually taking over, continuing the family’s commitment to balance and precision.

Vineyards & Terroirs

A little over 11 hectares are spread across Puligny-Montrachet, Meursault, Volnay, Pommard and regional appellations. The estate is farmed sustainably, with careful yield control and optimal grape ripeness to preserve the natural concentration of the wines. The range is complemented by some grapes sourced from trusted growers.

Winemaking

Chardonnay: gentle pressing, fermentation in oak barrels (15–30% new depending on the cuvée), ageing on lees for 10–14 months with minimal bâtonnage to preserve tension and minerality.

Pinot Noir: fully destemmed, long but gentle macerations, ageing in barrels with a moderate proportion of new oak. The result is a style defined by elegance, restraint and balance.

House Style

Whites: pure aromatics, chalky backbone, white flowers and citrus, with fine length and precision. Reds: dense yet refined, with polished tannins, crunchy red fruit and a harmonious structure.
