Domaine Denis Mortet — The Controlled Intensity of Gevrey-Chambertin

Domaine Denis Mortet is one of the most sought-after names in Gevrey-Chambertin and the Côte de Nuits. Its story began in 1956, when Charles Mortet began farming his first hectare of vines. His son Denis Mortet joined the family estate in 1978, before taking over in 1992 with around 4.5 hectares located notably in Gevrey-Chambertin, Chambolle-Musigny and Vougeot.

Visionary and exacting, Denis Mortet rapidly developed the estate by acquiring parcels in some of the finest climats of the Côte de Nuits, including a Chambertin Grand Cru in 1999. Following his passing in 2006, his wife Laurence Mortet, their son Arnaud Mortet and their daughter Clémence Mortet have continued the family story with the same pursuit of precision, purity and elegance.

Terroir: a mosaic of climats from Gevrey to Vougeot

Today, the estate cultivates around 16 hectares, spread across numerous parcels, from regional appellations to the greatest Grand Crus. This progression was built step by step: new parcels in Gevrey-Chambertin in 1993, the acquisition of En Combe du Dessus in 1997, Chambertin Grand Cru in 1999, followed by gradual expansion into other major climats of the Côte de Nuits.

This diversity offers a complete reading of Burgundian Pinot Noir: the mineral tension of Gevrey-Chambertin, the depth of the Grand Crus, the finesse of Chambolle-Musigny, the structure of Vougeot and the more immediate energy of village appellations. Clay-limestone soils, varied exposures and the mosaic of climats give the wines their relief, intensity and remarkable ageing capacity.

Viticulture: precision and respect for living soils

Since 1996, the estate has abandoned herbicides and chemical fertilisers, favouring ploughing, organic amendments, natural ground cover and a living approach to soils. This orientation aims to preserve terroir health, grape finesse and the natural balance of each climat.

The estate works according to the needs of each parcel and vintage, combining organic practices with reasoned viticulture. Harvesting is carried out exclusively by hand, in small crates, with meticulous sorting in the cellar so that only the healthiest, most precise and most balanced grapes are retained.

Aromatic profile

Fruit: black cherry, blackberry, cassis, dark raspberry, ripe redcurrant, deep black fruits and bright red fruits.

Flowers and spices: violet, peony, dark rose, fine pepper, sweet spices, delicate liquorice and floral notes.

Evolution and terroir: noble forest floor, fine leather, fresh earth, smoky notes, graphite, polished tannins and mineral tension.

Vinification: controlled intensity

Fermentations are natural and carried out with indigenous yeasts. Whole clusters are used partially depending on the vintage and cuvée, bringing freshness, complexity and structure without masking fruit purity.

Vatting: around 18 to 20 days, with duration adapted to each cuvée and vintage.

Extraction: limited punch-downs, with gentle, progressive and precise extraction.

Ageing: 16 to 18 months in oak barrels, with a variable proportion of new oak depending on appellation level and wine character.

New oak: more measured than in the past, used in higher proportions only for cuvées capable of integrating it, particularly certain Grand Crus.

Philosophy: preserve fruit purity, strengthen aromatic precision and retain intensity, structure and elegance.
