Domaine Dujac — The Elegance of Pinot Noir in the Côte de Nuits

Founded in 1968 by Jacques Seysses, Domaine Dujac is now one of the essential references of the Côte de Nuits. Since its first vintage in 1969, the domaine has been recognised for its refined Pinot Noir wines, clear parcel expression and remarkable consistency in quality.

A pioneer of a style combining purity, precision and depth, Jacques Seysses passed on his philosophy to his sons Jérémy and Alec Seysses, as well as to Diana Snowden Seysses, Jérémy’s wife. Together, they now lead the domaine with a modern vision, faithful to the founding spirit and deeply respectful of the living environment.

The spirit of the estate

A cult domaine from Morey-Saint-Denis, where Pinot Noir is expressed with finesse, transparency and depth. Dujac combines organic viticulture, parcel-by-parcel vinification, controlled whole-cluster use and precise ageing to produce elegant, structured wines that remain faithful to their climats.

Terroir: Morey-Saint-Denis and the great climats of the Côte de Nuits

The domaine covers around 17.5 hectares, spread across some of Burgundy’s most prestigious terroirs. Its historic parcels are located around Morey-Saint-Denis, complemented by vines in Vosne-Romanée, Chambolle-Musigny and Gevrey-Chambertin.

This mosaic of climats allows the domaine to express a rare balance between power, finesse and sense of place. The Grand Crus produce deep, structured wines built for ageing, while the Premier Crus reveal a more precise, floral and mineral reading of the great terroirs of the Côte de Nuits.

Organic viticulture and respect for the living world

Domaine Dujac has been certified in organic agriculture since 2011, after adopting respectful practices from 2001 and introducing biodynamic elements from 2003. This approach aims to preserve soil vitality, the natural balance of the vine and the precise expression of each climat.

Ploughing, the absence of herbicides, pruning adapted to each parcel, controlled yields and manual harvesting all contribute to grape quality. The bunches, picked at optimal ripeness, are brought whole to the cellar to encourage respectful and expressive vinification.

Fruit: black cherry, raspberry, blackberry, delicate cassis, ripe strawberry, fresh red fruits and deep black fruits.

Flowers and spices: peony, violet, dried rose, fine pepper, sweet spices, delicate liquorice and floral notes.

Evolution and terroir: delicate forest floor, fine leather, fresh earth, smoky notes, polished tannins, limestone freshness and mineral tension.

Parcel-by-parcel vinification and precise ageing

Each climat is vinified separately in order to preserve its individual identity. Whole clusters are often used in majority proportions, adjusted according to the vintage, ripeness and character of each parcel.

Harvest: predominantly whole-cluster vinification, with proportions varying according to the vintage.

Fermentation: indigenous yeasts, gentle punch-downs and pump-overs, with vatting lasting around two weeks.

Ageing: 14 to 18 months in oak barrels, with 60 to 85% new oak for the Grand Crus.

Bottling: fining avoided, filtration used only when necessary.

Domaine Dujac red wines are ideally served around 15 to 16°C. Young cuvées may benefit from measured aeration, while more mature bottles require delicate service to preserve their aromatic finesse and silky texture.

Their elegance pairs beautifully with roast poultry, pigeon, duck, veal, lamb, fine game, mushrooms, truffle, reduced sauces and aged cheeses. The Grand Crus can evolve for 20 to 30 years, developing notes of forest floor, fine leather, sweet spices and mineral depth over time.
