Domaine Ramonet — The Timeless Excellence of Chassagne-Montrachet

Domaine Ramonet is one of the absolute legends of white Burgundy and an essential benchmark in Chassagne-Montrachet. Founded in the late 1920s by Pierre Ramonet, known as “Père Ramonet”, the domaine quickly established itself through the purity, depth and exceptional longevity of its great Chardonnay wines.

Today, the estate remains in the hands of the Ramonet family, with Noël and Jean-Claude Ramonet, representatives of the third generation. The domaine’s style rests on a simple yet demanding idea: to let the great terroirs of Chassagne and Puligny speak with precision, tension, balance and timeless elegance.

The spirit of the estate

A mythical address in the Côte de Beaune, where Chardonnay reaches an expression of crystalline purity, mineral tension and tactile depth. Domaine Ramonet produces wines without ostentation, of rare precision, capable of ageing gracefully for several decades.

Terroir: Chassagne-Montrachet, Puligny-Montrachet and the great white Grands Crus

The domaine covers around 17 hectares, spread across a broad range of Côte de Beaune appellations, including Chassagne-Montrachet, Puligny-Montrachet, Saint-Aubin, Bouzeron and Pernand-Vergelesses. Chardonnay largely dominates, complemented by a few Pinot Noir parcels dedicated to Chassagne reds.

The jewel of the domaine remains its micro-parcel of Montrachet Grand Cru, of around 0.26 hectares, complemented by vines in Bâtard-Montrachet, Bienvenues-Bâtard-Montrachet and, according to some sources, a rare presence in Chevalier-Montrachet. In Chassagne-Montrachet, Premier Crus such as Les Ruchottes, Les Caillerets, Les Vergers, Morgeot and Boudriotte form the historical heart of the domaine.

Terroir expression: Chassagne-Montrachet, Puligny-Montrachet, limestone, marl, Chardonnay, Pinot Noir, wet stone, citrus, white flowers, salinity and mineral tension.

Ramonet signature: crystalline purity, measured ageing, saline tension, depth, precision, silky texture and immense ageing potential.

Viticulture: tradition, precision and respect for soils

Domaine Ramonet’s viticulture remains faithful to a traditional and meticulous approach. Soil work, natural yield control and careful observation of ripeness help preserve the balance of each parcel. Harvesting is carried out by hand, with rigorous grape selection.

Without excessive marketing claims, the domaine favours a culture of precision and the right gesture. The objective remains constant: to produce healthy, ripe and balanced grapes capable of transmitting the personality of each climat, from Bourgogne Blanc to the greatest crus of Montrachet.

Aromatic profile

Whites: ripe lemon, pear, fresh apple, white peach, white flowers, almond, fine hazelnut, discreet butter and wet stone.

Mineral expression: chalk, limestone, salinity, noble smoky notes, vertical energy, tension and persistent finish.

Reds: red cherry, raspberry, redcurrant, peony, fine spices, fine tannins and Chassagne freshness.

Overall impression: crystalline, profound and finely chiselled wines, combining texture, freshness, salinity and remarkable ageing capacity.

Vinification and tailor-made ageing

Vinification is carried out parcel by parcel, with an approach that favours balance over demonstration. The whites ferment in oak barrels, with new oak always used with restraint in order to preserve fruit purity and terroir expression.

Harvest: manual, with rigorous sorting and a search for precise ripeness.

Fermentation: parcel-based vinification, natural fermentations in barrel for the whites.

Ageing: generally 12 to 18 months depending on the cuvée, with new oak used sparingly.

Philosophy: preserve tension, aromatic precision, salinity and transparency of the climat.

Wine style

The wines of Domaine Ramonet are sought after for their crystalline purity, mineral tension, natural balance and exceptional ageing capacity. The whites combine often generous substance with limestone energy that gives them precision, brightness and persistence.

Over time, the great Ramonet wines develop nuances of hazelnut, fine honey, candied citrus, fresh butter, noble smoke and warm stone, while retaining remarkable freshness. The reds, more discreet but highly appreciated by connoisseurs, offer fresh, fine and delicately spicy Pinot Noir.

Emblematic cuvées and climats

Grand Crus

Montrachet Grand Cru: a mythical micro-production, majestic, dense, finely chiselled and of breathtaking length. The absolute summit of the domaine.

Bâtard-Montrachet Grand Cru: a broad, powerful and structured cuvée, combining richness, depth and limestone tension.

Bienvenues-Bâtard-Montrachet Grand Cru: a more airy and refined expression, marked by finesse, elegance and great floral delicacy.

Chevalier-Montrachet Grand Cru: a rare cuvée depending on allocations and sources, more vertical, taut and mineral, in a register of great precision.

Premier Crus and village wines

Chassagne-Montrachet 1er Cru Les Ruchottes: the domaine’s signature cuvée, upright, precise and vibrant, with remarkable saline tension.

Chassagne-Montrachet 1er Cru Les Caillerets: a chiselled, floral and mineral wine, carried by great textural finesse.

Chassagne-Montrachet 1er Cru Morgeot: a broader and more structured expression, with generous substance and fine depth.

Chassagne-Montrachet 1er Cru Boudriotte: an elegant, floral and balanced cuvée, often showing fine roundness.

Puligny-Montrachet “Les Enseignères”: a village wine of very high expression, located below the Grands Crus, combining pure intensity, delicate florality and wet stone.

Chassagne-Montrachet Rouge: fresh, juicy and finely tannic Pinot Noir, revealing the discreet charm of Chassagne reds.

An icon of white Burgundy

Domaine Ramonet embodies one of the highest expressions of white Burgundy. Its reputation rests less on discourse than on the consistency of the bottles: wines of rare precision, capable of expressing both the power of the great Montrachet terroirs and the mineral delicacy of Chassagne Premier Crus.

This alliance of intensity, discretion and longevity explains the lasting fascination of enthusiasts and collectors. Whether Montrachet, Ruchottes, Caillerets or Enseignères, each cuvée carries the Ramonet signature: pure tension, noble texture and a finish that seems to extend indefinitely.
