Domaine Perrot-Minot — The crystalline precision of the Côte de Nuits

Based in Morey-Saint-Denis, at the heart of the Côte de Nuits, Domaine Perrot-Minot stands among the most sought-after names in contemporary Burgundy. Its identity is built on a remarkably precise interpretation of Pinot Noir, supported by old vines, meticulous viticulture, highly delicate vinifications and ageing that is always designed to serve the terroir.

Since 1993, Christophe Perrot-Minot has refined the domaine’s style with exceptional focus, favouring fruit purity, infusion rather than extraction, fine tannins and the natural vibration of the great climats of the Côte de Nuits. The wines are defined by a rare combination of intensity, transparency, energy and elegance.

The spirit of the domaine

A Burgundy of precision, texture and depth. Perrot-Minot seeks the clearest possible expression of each climat: pure fruit, silky tannins, integrated oak, airy structure and intensity without heaviness. The domaine follows an aesthetic of great finesse, where power comes from balance rather than extraction.

History: a family trajectory turned benchmark

The domaine’s history is rooted in the continuity of the Merme family, present in Burgundy for several generations. The family vineyard holdings were passed on to Marie-France Merme and Henri Perrot-Minot, before their son, Christophe Perrot-Minot, took over the estate in 1993.

This transition marked a decisive turning point. After an early career in the wine trade, Christophe Perrot-Minot brought to the domaine an extremely precise vision of terroirs, ripeness and balance. He progressively refined the vinifications, reduced unnecessary intervention and guided the style toward greater purity, depth and definition.

The acquisition of parcels from the former Domaine Pernin-Rossin in the early 2000s also helped strengthen the estate’s vineyard holdings. Today, Perrot-Minot works with a remarkable collection of climats, with a strong presence across village, premier cru and grand cru appellations of the Côte de Nuits.

Terroirs: a major mosaic of the Côte de Nuits

Domaine Perrot-Minot’s vineyard area is generally estimated at around 12 to 13 hectares, depending on sources and how the parcels under cultivation are counted. The vines are mainly located in Morey-Saint-Denis, Gevrey-Chambertin, Chambolle-Musigny, Vosne-Romanée, Nuits-Saint-Georges and Clos de Vougeot.

The soils combine fractured limestone, marl, fine clay, stony scree and subtle variations in exposure, giving Pinot Noir highly differentiated expressions: the darker depth of Gevrey, the floral elegance of Chambolle, the structured intensity of Morey, the spicy sensuality of Vosne and the more earthy tension of Nuits-Saint-Georges.

The domaine places particular importance on old vines, some of which are very old and form one of the cornerstones of its style. These low-yielding vines produce concentrated, naturally balanced berries capable of giving wines that are at once deep, refined and intensely expressive.

Terroir expression: Morey-Saint-Denis, Gevrey-Chambertin, Chambolle-Musigny, Vosne-Romanée, Nuits-Saint-Georges, Clos de Vougeot, limestone, marl, fine clay, old vines and highly defined Pinot Noir.

Perrot-Minot signature: pure fruit, polished tannins, gentle extraction, measured ageing, natural energy, depth without heaviness and a very precise reading of each climat.

Viticulture: manual precision and respect for the living soil

The domaine tends its vineyards with meticulous care: careful soil work, controlled yields, precise monitoring of ripeness, manual harvesting and rigorous sorting. The approach is often described as sustainable, highly qualitative and guided by a search for natural balance, without relying solely on the display of a certification label.

Each parcel is treated as an individual entity. The aim is to preserve the identity of every climat, harvest healthy and perfectly ripe grapes, and then retain in the cellar the energy, finesse and complexity acquired in the vineyard.

Aromatic profile

In youth: black cherry, griotte cherry, raspberry, fresh blackberry, peony, old rose, violet, sweet spices and a hint of liquorice.

With age: noble undergrowth, black tea, truffle, bark, incense, fine pepper, fresh earth and nuances of preserved fruit without heaviness.

On the palate: silky texture, chiselled tannins, deep substance, sustained freshness, mineral length and remarkable tactile precision.

Overall impression: refined, pure, intense and highly transparent Pinot Noir wines, where elegance always prevails over demonstration.

Vinification: infusion, delicacy and integrated ageing

In the cellar, Christophe Perrot-Minot favours very gentle vinification, often described as an infusion approach. Extractions are measured, macerations are adapted to the vintage and quality of the fruit, and whole bunches are used cautiously when they bring freshness, savoury complexity and aromatic lift.

Ageing takes place in Burgundian barrels, with a deliberately controlled proportion of new oak, adjusted according to the cuvée, vintage and appellation level. Oak must never dominate: it supports the structure, polishes the tannins and allows the natural finesse of Pinot Noir to speak clearly.

Harvest: manual picking, strict selection and precise sorting of the grapes.

Vinification: delicate macerations, gentle extractions and judicious use of whole clusters depending on the year.

Ageing: Burgundian barrels, measured new oak, and a constant search for integration, purity and transparency.

Philosophy: preserve the brilliance of the fruit and the truth of the climat, without masking the wine through extraction or oak.

Wine style

The wines of Domaine Perrot-Minot are recognised for their aromatic clarity, silky texture and ability to combine concentration with lightness of touch. They do not seek a spectacular effect, but rather a form of crystalline precision: pure fruit, fine tannins, an elongated palate, progressive depth and a long finish.

The village wines already show an impressive level of definition, while the premiers crus and grands crus gain in breadth, floral complexity, spicy nuance and mineral depth. The finest cuvées have significant ageing potential, often over several decades for the greatest terroirs and strongest vintages.

Emblematic cuvées

Grands crus

Chambertin Grand Cru: a wine of imposing stature, deep, structured and intense, driven by dark energy and remarkable ageing capacity.

Chambertin-Clos de Bèze Vieilles Vignes Grand Cru: one of the domaine’s major cuvées, combining aromatic nobility, floral depth, fine spices and exceptional length.

Charmes-Chambertin Grand Cru: a more sensual and enveloping expression of Gevrey, with generous fruit, silky texture and an elegant finish.

Mazoyères-Chambertin Grand Cru: a climat of depth and density, more earthy, structured and long, yet always handled with finesse.

Clos de Vougeot Grand Cru: a broad, upright and noble wine, combining structure, restraint, fruit precision and ageing potential.

Premiers crus and reference cuvées

Nuits-Saint-Georges 1er Cru La Richemone Vieilles Vignes: a deep, intense and distinguished cuvée, marked by the density of old vines and a darker structure.

Chambolle-Musigny 1er Cru La Combe d’Orveau: a wine of elegance and precision, floral, silky and airy, with great textural finesse.

Morey-Saint-Denis 1er Cru La Riotte: a refined expression of Morey, balancing subtle structure, clear fruit, sweet spices and harmony.

Vosne-Romanée 1er Cru Les Beaux Monts: a highly distinguished cuvée, spicy, vibrant and sensual, carried by elegant tension.

Gevrey-Chambertin Les Perrières: a village wine of very high calibre, mineral, precise and deep, illustrating the domaine’s ability to elevate every appellation to a remarkable level.

A reference sought after by lovers of great Pinot Noir

The rarity of Perrot-Minot wines stems from the limited size of the domaine, the value of its old vines, the precision of its parcel-by-parcel work and increasing international demand. The grands crus and certain old-vine cuvées rank among the most coveted bottles of the Côte de Nuits.

Yet the domaine’s strength lies in its consistency: from village appellations to grands crus, every wine carries the same signature of purity, finesse and precision. This stylistic coherence, combined with a remarkable vineyard heritage, explains Perrot-Minot’s singular position among Burgundy’s leading domaines.
