The Estate

Nestled in the heart of the Combe de Savoie at the gateway to the French Alps, Domaine de Chevillard represents the new wave of high-end Savoie producers. Guided by Matthieu Goury and Guillemette Renard, the estate farms around 10 hectares of vineyards under organic and biodynamic principles, crafting wines of exceptional purity and alpine tension. Their vision is clear: to express the true identity of Savoie’s great mountain terroirs through precise, vibrant and deeply site-driven wines.

Terroir & Vineyard

The vineyards lie on steep, ventilated slopes between 350 and 600 metres altitude, shaped by a mosaic of limestone scree, marl, glacial deposits and stony alluvial terraces. These well-drained soils, combined with the alpine climate and strong diurnal shifts, produce wines marked by freshness, salinity and mineral precision.

Savoie’s noble grape varieties dominate the plantings: Jacquère for the region’s crystalline whites (Apremont, Abymes), Altesse for structured and long-lived Roussette de Savoie, and Mondeuse for the estate’s deep, spicy reds (notably from Saint-Jean-de-la-Porte). Gamay, Pinot Noir and a touch of Chardonnay complete a collection that showcases Savoie’s full alpine identity.

Philosophy & Viticulture

The estate follows an artisanal, soil-focused approach: gentle cultivation, no herbicides, minimal inputs and strict yield control. Old vines, meticulous canopy work and natural ground cover contribute to balanced, concentrated fruit. Harvesting is done entirely by hand, in small crates, followed by severe sorting to retain only pristine, perfectly ripe berries.

Winemaking & Ageing

In the cellar, winemaking is minimal-intervention and tailored to each cuvée. Whites undergo slow, gentle pressings and ferment with indigenous yeasts before ageing on fine lees in tanks, foudres or older barrels. Reds ferment with soft extraction to highlight fruit purity and freshness, followed by élevage in seasoned barrels that respect the alpine character of the Mondeuse. Sulphur additions are moderate, and the wines are bottled with no fining and minimal filtration.

Wine Style

Domaine de Chevillard’s wines are defined by alpine tension, clarity and precision. The whites are marked by notes of citrus, white flowers and crushed stone, with a distinctive saline minerality and long, chiselled finishes. The reds—especially Mondeuse—offer black and red fruit, violet, pepper and fine spice, carried by elegant tannins and a natural freshness that gives the wines length and lift. These are gastronomic wines, capable of ageing gracefully while retaining a vibrant, energetic profile.
