Domaine Philippe Pacalet — Burgundy
Founded in 2001 and based in Beaune, Domaine Philippe Pacalet is one of the most respected and emblematic names in contemporary Burgundy. Coming from a long line of winemakers and nephew of natural wine pioneer Marcel Lapierre, Philippe Pacalet has gained international renown for crafting wines of remarkable purity and precision. After studying oenology and working with Jules Chauvet — a major figure in the natural wine movement — he perfected his craft as cellar master at Domaine Prieuré Roch before launching his own estate.
Rather than owning large vineyards, Philippe Pacalet carefully selects and leases parcels across the Côte de Nuits, Côte de Beaune, Beaujolais, and Chablis. This allows him to produce a highly sought-after range, from regional Bourgogne Rouge and Blanc to prestigious appellations such as Gevrey-Chambertin, Nuits-Saint-Georges, Pommard, Meursault, and Chambolle-Musigny. Annual production remains deliberately limited — around 50,000 bottles — to preserve excellence and authenticity of terroir expression.
Philosophy & Winemaking
The domaine follows organic and biodynamic farming practices (uncertified), fostering soil vitality and natural balance. In the cellar, the approach is entirely non-interventionist: indigenous yeast fermentations, whole-cluster vinification for reds, foot treading, and long barrel ageing (15 to 18 months) without racking or filtration. Sulfur use is minimal and only applied at bottling if necessary, to preserve the wine’s aromatic purity and energy.
