Terroirs & Vineyard

The estate covers around 6–6.5 hectares, exclusively located on the finest slopes of Fläsch: Spondis, Herrenacker, Fläscher Halde and am Berg. These parcels form a mosaic of micro-terroirs perfectly suited to finesse-driven grape varieties.

Key terroir characteristics:

  • Altitude: 500–600 m, bringing freshness, luminosity and slow ripening.

The estate follows an artisanal and deeply nature-respecting approach:

  • 100% manual harvesting.

Each plot is treated as a cru in its own right, with the goal of capturing its truest possible expression. This coherent philosophy produces wines that are precise, deep and luminous.

Vinification & Ageing

Pinot Noirs – Alpine Finesse and Energy

Red wines are crafted with a clear Burgundian influence, adapted to the alpine identity of the fruit:

  • rigorous berry selection,
  • use of whole bunches (up to 80–100% for Spondis and Herrenacker),
  • spontaneous fermentations in stainless steel or wood,
  • measured macerations for finesse and vibrancy,
  • ageing for 12–20 months in Burgundian barrels, with calibrated oak influence.

The result: ruby-bright reds with pure, intense fruit, fine chalky tannins, pronounced freshness and long, vertical structure. A true expression of mountain Pinot Noir.

Whites & Sparkling – Tension and Precision

White wines follow the same meticulous ethos:

  • gentle pressing,
  • spontaneous fermentation,
  • ageing on lees,
  • discreet, perfectly integrated oak.

The estate’s sparkling wine, Adank’s Brut, is considered a Swiss benchmark: extended lees ageing, minimal dosage, saline and refined profile.
