Les Hauts de Carol’s 2023 from Domaine La Terrasse d’Élise is one of the finest contemporary expressions of Cinsault in the Languedoc. Crafted by Xavier Braujou, this rare cuvée offers a singular vision of the grape: not a light or secondary red wine, but a deep, silky, floral and remarkably refined interpretation.

Produced from old vines and aged for a long period in barrel, the 2023 vintage combines Mediterranean ripeness with an uncommon finesse of texture. The wine stands out for its bright red fruit, notes of rose, fresh spices and blood orange, with a delicate, elongated and beautifully controlled palate.

Terroir

Domaine La Terrasse d’Élise works in the Hérault, around Aniane, on Mediterranean terroirs capable of giving southern grape varieties a fine, fresh and deeply nuanced expression. Les Hauts de Carol’s comes from old Cinsault vines grown on limestone and marl soils, which bring more structure, depth and persistence than is usually expected from this variety. The extended ageing refines the texture without seeking a dominant oak signature.

Tasting notes

Appearance: light ruby red with garnet reflections, luminous and elegant rather than deeply extracted.

Nose: aromas of ripe strawberry, raspberry, red cherry, fresh rose, blood orange, soft pepper and dried herbs, accompanied by subtle nuances of spice and fine cocoa.

Palate: silky, pure and delicate in texture, supported by fine tannins and beautifully integrated freshness. The wine combines grace, depth and persistence, with a long finish on red fruit, flowers, gentle spices and a light garrigue sensation.
