Terroir & Winemaking
Located in Pézenas, Prieuré Saint-Jean de Bébian is one of the Languedoc’s historic estates. The vineyards lie on a terroir of rounded pebbles, red clays, and limestone, providing natural drainage and nocturnal heat retention that promotes slow, even ripening. The warm, dry Mediterranean climate is moderated by regional winds (tramontane and marin), ensuring concentration while preserving freshness.
The blend typically combines Syrah, Grenache, Mourvèdre, and Carignan, sometimes complemented by rarer varieties. Vinification focuses on gentle extraction to preserve terroir expression, followed by measured aging in vats and oak to structure the wine without masking the fruit. The 2022 vintage, sunny yet balanced, stands out for its ripe tannins and aromatic intensity.
Tasting Notes
Nose:
Expressive and deep, with blackberry, blackcurrant, and black plum, layered with garrigue notes (thyme, rosemary), black pepper, and licorice. With aeration, subtle smoky nuances and a mineral touch emerge.
Palate:
Full-bodied and velvety, supported by ripe, silky tannins. The generous texture is balanced by welcome freshness, bringing precision and elegance. The overall style is both sun-kissed and structured.
Finish:
Long and persistent, marked by sweet spices, Mediterranean herbs, and dark fruit. A fine depth suggesting strong aging potential over the next decade or more.
