Terroir & Winemaking

The “Derrière chez Edouard” Premier Cru lies in the elevated slopes of Saint-Aubin, near the border with Puligny-Montrachet. The vineyard sits on thin soils over hard limestone bedrock, with a high proportion of stones that enhance drainage and root penetration. This terroir produces wines of tension, salinity, and crystalline purity, often rivaling neighboring Puligny in finesse.

Hubert Lamy is known for a meticulous, low-intervention approach: early harvesting to preserve acidity, gentle pressing, and long lees aging to build texture while maintaining energy. Oak is used sparingly to frame the wine rather than mark it, allowing the terroir’s mineral signature to remain at the forefront.

Fresh and lifted, with lemon zest, green apple, and white peach, layered with white flowers and a distinctive chalky / flinty minerality.
