Terroir & Winemaking
The En Remilly climat is among the most esteemed Premier Crus of Saint-Aubin, situated directly at the border of Puligny-Montrachet and extending the lineage of the Côte de Beaune’s great white wine terroirs. Planted on steep, high-altitude slopes with a south to south-east exposure, the vineyards rest on stony limestone soils with excellent drainage. This combination of elevation and exposed bedrock gives the wines their vibrant tension, chalky minerality, and crystalline expression of Chardonnay.
At Domaine Pierre-Yves Colin-Morey, viticulture emphasizes low yields and optimal fruit maturity. Fermentations occur with indigenous yeasts, followed by aging on fine lees in mostly neutral Burgundian oak barrels, preserving aromatic purity and natural texture. The 2021 vintage, shaped by cool conditions and reduced yields, produced wines of great precision and freshness, where minerality and structure take precedence over opulence.
Tasting Notes
Nose:
Highly refined, revealing aromas of fresh lemon, grapefruit, and green apple, layered with white flowers, flint, and raw almond. With aeration, subtle saline and lightly buttery nuances emerge, enhancing the wine’s complexity.
Palate:
Precise and linear, driven by chiseled acidity and a silky texture. The wine shows remarkable purity, expressing chalky minerality and a saline tension reminiscent of the great neighboring wines of Puligny-Montrachet.
Finish:
Long and vibrant, with lingering saline and citrus notes. The balance of freshness, energy, and depth suggests a noble and complex evolution over time.
