A Premier Cru Chablis of remarkable mineral depth, combining saline tension, chalky structure, and vibrant energy, born from the limestone slopes of the Butteaux climat within Montmains.
Terroir & Winemaking
The Butteaux climat, part of Montmains Premier Cru on the left bank of the Serein River in Chablis, rests on Kimmeridgian marl soils rich in marine fossils and active limestone. This geology gives the wine its hallmark chalky minerality, iodine-tinged salinity, and firm structure, signatures of great Chablis terroirs. The south to southeast exposure and well-drained slopes promote optimal ripening while preserving natural tension.
At Domaine François Raveneau, vineyards are farmed with modest yields and deep respect for the living ecosystem. Fermentation relies on indigenous yeasts, followed by extended aging in older oak barrels and tanks, allowing the wine to gain texture and complexity without obscuring terroir expression. This artisanal approach produces wines that are precise, layered, and exceptionally balanced.
Tasting Notes
Nose:
Pure and incisive, revealing lemon zest, grapefruit, and green apple, layered with white flowers, flint, and a chalky minerality with oyster-shell and iodine nuances.
Palate:
A vivid, precise attack driven by bright acidity and a saline limestone backbone. The mid-palate shows a dense yet streamlined texture, combining ripe citrus, orchard fruits, and a subtle smoky note. The balance between tension and depth conveys great nobility.
Finish:
Very long, chalky, and mouthwatering, marked by citrus zest, a fine noble bitterness, and an elegant saline persistence. A cellar-worthy Premier Cru that can evolve toward notes of fine honey, hazelnut, and white truffle over time.
