Château Pavie is one of the great icons of Saint-Émilion and one of the few estates to hold the rank of Premier Grand Cru Classé A. Located on the south-eastern slopes of the appellation, this historic estate stands out for a deep, intense and structured style, shaped by exceptional limestone terroir and a constant pursuit of precision.
Since its acquisition in 1998 by Gérard and Chantal Perse, Château Pavie has undergone a major transformation: vineyard restructuring, increased parcel precision, a modernised winery and extremely demanding selection work. Today, the estate is renowned for wines of great density — powerful, ripe, fresh and built for very long ageing.
A Saint-Émilion of depth, architecture and great ageing potential. Pavie seeks concentration without losing freshness, power without sacrificing precision, and a dense expression of the limestone plateau, clay-limestone slopes and more gravelly soils that define its identity.
The name Pavie refers to the old vineyard peaches, known as “pavies”, that once grew on part of the Saint-Émilion slopes. The wine estate truly took shape in the 19th century, when parcels were gradually brought together to form one of the major vineyard holdings of the appellation.
Long recognised as one of the leading growths of Saint-Émilion, Château Pavie entered a decisive new era in 1998, when it was acquired by Gérard and Chantal Perse. Their ambition was clear: reveal the full potential of the terroir, modernise the facilities and raise the estate to the level of Bordeaux’s greatest wines.
This transformation led to major recognition: in 2012, Château Pavie was promoted to Premier Grand Cru Classé A of Saint-Émilion. The estate retained this status in the 2022 classification, confirming its place among the most prestigious references on the Right Bank.
The vineyard of Château Pavie now covers around 42 hectares, a significant surface for a Saint-Émilion estate of this level. It forms a remarkable ensemble on the south-eastern slopes of the appellation, with great diversity of soils and exposures.
The terroir is divided into several major components: the limestone plateau, bringing tension, verticality and freshness; the clay-limestone slopes, giving depth, density and power; and more gravelly areas, contributing aromatic finesse and fruit precision.
Pavie’s modern planting is mainly based on Merlot, complemented by a significant proportion of Cabernet Franc and a notable share of Cabernet Sauvignon. This Cabernet presence, reinforced in certain recent vintages, brings freshness, structure, length and complexity to the final blend.

Viticulture at Pavie is often described as highly attentive, with extensive manual work, sustainable practices and strict sorting standards. The objective is to harvest perfectly ripe grapes while retaining enough freshness to balance the natural concentration of the terroir.
Youth: blackberry, cassis, black plum, black cherry, blueberry, violet, liquorice, dark chocolate, graphite, sweet spices and mocha.
Evolution: black truffle, tobacco, fine leather, cedar, forest floor, candied black fruits, warm earth, coffee, smoke and mineral notes.

Vinification at Château Pavie is based on very precise lot selection. Grapes are rigorously sorted, then vinified by parcel in order to preserve the nuances of the terroir. Extractions aim to build an ample and profound structure while retaining freshness and aromatic definition.
Harvest: manual picking, successive sorting, optical sorting depending on the vintage and a search for precise ripeness.
Vinification: parcel-based vinification, controlled macerations, extractions adapted to each lot and a search for noble tannins.
Ageing: barrel ageing, often with a significant proportion of new oak, to support structure and ageing capacity.

The style of Château Pavie is defined by density, depth and power. The wines offer generous substance, marked yet polished tannins, intense black fruit and a structure built for ageing.
Recent vintages show an increased search for freshness, length and precision, without abandoning the estate’s historic signature. Pavie remains a wine of great architecture, often impressive in youth, but capable with time of revealing more nuanced complexity: truffle, tobacco, graphite, spices, cedar and candied black fruits.

Château Pavie produces wines built for ageing. Great modern vintages such as 2000, 2005, 2009, 2010, 2015, 2016, 2018, 2019, 2020 and 2022 are among the château’s most sought-after references.
In great years, ageing potential easily exceeds 30 years. With time, the wines gain complexity, integrating their initial power to develop finer nuances of truffle, tobacco, leather, graphite, spice and forest floor.
Château Pavie calls for dishes with character: aged rib of beef, roast lamb, game, duck, pigeon, black truffle, reduced jus, noble mushrooms and mature cheeses. Its density and structure are particularly well suited to deep flavours, long sauces and savoury meats.
