Weingut Wittmann — The Great Limestone Precision of Westhofen
Weingut Wittmann is one of the leading references for dry German Riesling. Based in Westhofen, in the Rheinhessen region, this family estate embodies a demanding vision of wine: biodynamics, a precise reading of limestone terroirs, patient ageing and a remarkable search for mineral definition.
Led by Philipp Wittmann, alongside his family, the estate combines a long viticultural history with a central role in the qualitative renewal of Rheinhessen. Its great Rieslings from Morstein, Kirchspiel, Aulerde, Brunnenhäuschen and Höllenbrand are sought after for their straightness, depth and ability to age with great nobility.
A pure, dry and vertical expression of Riesling from Westhofen. Wittmann seeks wines of tension and depth, where fruit ripeness is always carried by freshness, salinity and limestone structure. The style favours inner energy, aromatic precision and the ability of the wine to reveal its terroir slowly over time.
History: a winegrowing family since the 17th century
The Wittmann family has been connected to winegrowing in Westhofen since the 17th century. This long family continuity is one of the estate’s strengths: each generation has passed on an intimate knowledge of the slopes, soils and behaviour of the vines.
In the late 20th century, the estate took a decisive turn with its conversion to organic farming, certified from 1990, followed by biodynamic farming, certified since 2004. This early commitment places Wittmann among the German pioneers of viticulture focused on soil life and the vitality of the living environment.
Under the guidance of Philipp Wittmann, the estate has affirmed a contemporary and highly precise interpretation of dry Riesling. The aim is not to produce demonstrative wines, but wines capable of carrying the identity of Westhofen with clarity, depth and longevity.
Terroirs: Westhofen and the great limestone soils of Rheinhessen
The estate farms around 28 to 30 hectares, depending on the parcels worked and the vintage. Its heart lies in Westhofen, an emblematic village of the Wonnegau, in southern Rheinhessen. The slopes rest on a complex mosaic of limestone, clay marl, loess, stony soils and ancient geological formations that give the wines their tension and depth.
The estate’s great crus are among the most renowned in Germany. Morstein gives deep, powerful Rieslings with a strong mineral architecture. Kirchspiel offers more slender, saline and chiselled wines. Aulerde, earlier-ripening, produces broader, riper and more textured Rieslings. Brunnenhäuschen is marked by a taut, chalky and refined expression. Höllenbrand completes this picture with precise and solar energy.
This diversity allows Wittmann to build a highly readable range: estate wines, village wines, Erste Lage and VDP.Grosse Lage grands crus. Each level retains the house signature: dry, taut, structured and deeply marked by the limestone soils of Westhofen.
Terroir expression: Westhofen, Rheinhessen, Morstein, Kirchspiel, Aulerde, Brunnenhäuschen, Höllenbrand, Riesling, limestone, marl, tension, salinity and depth.
Wittmann signature: biodynamics, dry Rieslings, spontaneous fermentations, large wooden casks, patient ageing, mineral precision and strong ageing potential.
Viticulture: biodynamics and soil vitality
The estate has been certified organic since 1990 and biodynamic since 2004. Vineyard work is based on close observation of the soils, biodiversity, biodynamic preparations, limited inputs and a search for natural balance within each parcel.
Yields are controlled and harvesting is carried out with rigorous selection. The goal is to obtain perfectly ripe grapes without heaviness, capable of producing dry wines that are powerful, precise and deeply digestible. This approach gives Wittmann Rieslings their vertical energy and remarkable stability over time.
Young Riesling: lemon, lime, grapefruit, yellow apple, white peach, fine herbs, white flowers, wet stone, chalk and saline notes.
Mature Riesling: ripe yellow fruits, candied zest, fine honey, chamomile, sweet spices, wax, warm stone, noble smoke and mineral depth.
Texture: dry, dense and chiselled palate, structuring acidity, saline substance, long finish and a strong sense of purity.
Overall impression: dry, profound and vertical Rieslings, where power is always channelled by limestone tension.
Vinification: spontaneous fermentation and large wooden casks
In the cellar, Wittmann favours a restrained and patient approach. Fermentations generally take place with indigenous yeasts, and the wines are mainly aged in large wooden casks or suitable barrels in the estate’s historic vaulted cellar. This method supports Riesling’s structure without obscuring the reading of terroir.
Fermentation: indigenous yeasts, slow fermentations and respect for the natural rhythm of each cuvée.
Ageing: large wooden casks and traditional vessels, with a focus on texture, stability and precision.
Style: mostly dry wines, structured, saline and designed to evolve slowly.
Philosophy: not to embellish the wine, but to reveal the depth of each cru through time, patience and restrained gestures.
Wine style
The wines of Weingut Wittmann stand out for their straightness, dry density and mineral precision. The Rieslings are never merely aromatic: they possess true architecture, with structuring acidity, compact substance and a saline finish that extends the palate.
The village cuvées already offer a clear reading of the Westhofen style, while the grands crus reveal broader depth and remarkable ageing capacity. With age, the wines gain complexity, texture and spicy nuance, while retaining their original tension.
Emblematic cuvées
Westhofener Morstein Riesling GG: the estate’s most emblematic grand cru. A deep, powerful and monumental Riesling, marked by limestone structure, great length and exceptional ageing potential.
Westhofener Kirchspiel Riesling GG: a taut, mouth-watering and chiselled cuvée, offering a more vertical, precise and crystalline expression of Westhofen Riesling.
Westhofener Aulerde Riesling GG: a broader and sunnier Riesling, often more accessible in youth, with generous substance and fine depth.
Westhofener Brunnenhäuschen Riesling GG: a refined, chalky and highly precise expression, with remarkable mineral tension and great finesse on the palate.
Westhofener Höllenbrand Riesling GG: a cuvée from a great terroir recently emphasised in the estate’s hierarchy, combining brightness, energy and saline depth.
Westhofener Riesling: a village wine that clearly represents the Wittmann style — dry, precise, limestone-driven and already strongly structured.
Estate Riesling & other cuvées: an introduction to the estate’s universe, with dry, clear, lively wines carried by Rheinhessen freshness.
Ageing and gastronomic pairings
Wittmann’s great Rieslings have remarkable ageing potential. Cuvées from Morstein, Kirchspiel, Aulerde, Brunnenhäuschen and Höllenbrand can evolve for many years, gaining depth, complexity and mineral nuance.
At the table, Wittmann’s dry Rieslings pair beautifully with noble fish, shellfish, scallops, poultry, refined Asian cuisine, herb-led dishes, asparagus, goat cheeses, mature cheeses and lightly spiced preparations. Their tension and salinity also make them excellent gastronomic wines for precise, low-sugar cuisine.
