Domaine Tom Litwan is one of the most distinctive signatures in German-speaking Switzerland. Based in Oberhof, in the canton of Aargau, Tom Litwan produces highly refined artisan wines, mainly focused on Pinot Noir, with a biodynamic, parcel-based and deeply handcrafted approach.
Founded in 2006, the domaine quickly gained recognition among lovers of great Swiss wines for its straight, pure and highly expressive style. Tom Litwan’s Pinots combine delicate fruit expression, limestone tension, airy texture and a precise sense of place. Production remains very limited, making the bottles particularly sought after.
An intimate and precise Swiss expression of Pinot Noir, shaped by biodynamics and a detailed reading of Aargau’s hillside vineyards. Tom Litwan seeks clear, digestible and profound wines, where ripeness remains fresh, tannins are delicate and minerality is always present. The style can recall Burgundy through its restraint, while retaining a clearly Swiss identity.
Tom Litwan began his winegrowing project in 2006, with the ambition of producing authentic wines in the rolling landscapes of Aargau. His path is marked by a deep curiosity for terroir-driven wines, a strong sensitivity to organic and biodynamic practices, and a clear admiration for the great Pinot Noirs of Burgundy.
The domaine gradually developed around several parcels located in different villages of Aargau. This patient construction allows Tom Litwan to build a highly precise range of single-site wines, where each place has its own rhythm, soil, exposure and personality.
Within only a few vintages, the domaine gained strong recognition among sommeliers, specialist wine merchants and collectors of rare Swiss wines. The most sought-after cuvées, notably Thalheim Chalofe and Oberhof Haghalde, are now considered among the finest expressions of Swiss Pinot Noir.
The domaine covers around 5.5 hectares, depending on the parcels farmed and the vintage, spread across several hillside sites in Aargau. The vines are located around Oberhof and in different villages of the canton, including Thalheim, Obermumpf, Elfingen and Herznach.
The soils are mainly clay-limestone and marl-limestone, with varying proportions of loam, scree and gravel depending on the parcel. This geology gives the wines a straight frame, sustained freshness and a particularly marked mineral tension.
The well-ventilated slopes encourage slow and gradual ripening. This slow maturation is essential to the Litwan style: it allows the grapes to reach aromatic ripeness without losing the fine acidity and tactile lightness that define the wines.
Terroir expression: Aargau, Oberhof, Thalheim, Obermumpf, Elfingen, Herznach, limestone, marl, ventilated hillsides, Pinot Noir, Chardonnay, Riesling-Silvaner, freshness and salinity.
Litwan signature: biodynamics, parcel-based vinification, indigenous yeasts, gentle extraction, discreet ageing, low dosage for sparkling wines and a constant search for purity.
The domaine is farmed according to biodynamic principles, with particular attention paid to soil vitality, observation of natural cycles and the balance of each parcel. Work is largely manual, with precise and measured interventions.
Yields are deliberately low in order to obtain grapes with concentration but no heaviness. Harvesting is carried out by hand, with strict bunch selection. The aim is to preserve freshness, energy and aromatic precision while giving the wines genuine substance.
Young Pinot Noir: red cherry, raspberry, wild strawberry, redcurrant, peony, rose, subtle citrus notes, fine pepper, wet stone and chalky nuances.
Mature Pinot Noir: forest floor, black tea, dried flowers, sweet spices, fine leather, candied red fruits, herbal infusion and elegant earthy nuances.
Whites and sparkling wines: lemon, pear, white flowers, green apple, fine herbs, fresh almond, chalk, cold stone and a saline finish.
Overall impression: straight, fine and luminous wines, with a more vertical than demonstrative energy and excellent drinkability.
In the cellar, Tom Litwan favours a low-intervention approach. Grapes are vinified parcel by parcel, often with a variable proportion of whole clusters depending on the vintage and cuvée. Fermentations take place with indigenous yeasts in small vats, with gentle extraction.
Reds: parcel-based vinification, variable whole-cluster use, measured pump-overs, light punch-downs and a search for very delicate extraction.
Whites: restrained vinification, lees ageing and a search for straightness, salinity and aromatic clarity.
Ageing: 12 to 18 months in barrels, mostly used, in order to preserve fruit finesse and terroir imprint.
Sparkling wines: lees ageing, Extra-Brut method and very low dosage to retain a pure, taut and chalky expression.
The wines of Tom Litwan are defined by finesse and precision. The Pinot Noirs do not seek spectacular concentration, but length, touch and aromatic purity. Colours are often moderate, aromatics highly defined and palates slender and energetic.
The whites and sparkling wines extend the same idea of tension and clarity. They are dry, saline and very straight, with subtle aromatic expression and often chalky finishes. The whole domaine is built around a living, precise and deeply digestible vision of wine.
Pinot Noir Thalheim Chalofe: one of the domaine’s major cuvées, often considered among Switzerland’s great Pinot Noirs. A deep, filigree, floral and mineral wine, with very fine ageing potential.
Pinot Noir Oberhof Haghalde: a precise and taut expression of Pinot Noir, with a straight frame, great fruit purity and a chalky finish.
Pinot Noir Obermumpf Unterem Berg: a high-slope Pinot, delicate, floral and very pure, marked by fine texture and fine freshness.
Pinot Noir Elfingen Rüeget: a refined cuvée with precise tannins, driven by mineral energy and elegant aromatics.
Pinot Noir Herznach Allmend: a slender and luminous expression of Aargau Pinot, balancing freshness, fruit and fine structure.
Chardonnay Wanne: a highly precise white, chiselled, straight and saline, sought after for its energy and Burgundian-inspired clarity.
Extra-Brut Blanc de Noirs & Extra-Brut Petit Meslier: very precise sparkling wines, minimally dosed, combining tension, fine bubbles and chalky freshness.
Tom Litwan’s parcel-based Pinot Noirs have interesting ageing potential, often 8 to 15 years depending on the cuvée and vintage. The finest wines gain aromatic depth, floral complexity and forest-floor nuances with time.
At the table, the Pinot Noirs pair well with roast poultry, duck, veal, mushrooms, herb risotto, lightly grilled noble fish, soft cheeses and refined vegetable-based cuisine. The whites and sparkling wines work beautifully with fish, shellfish, fresh cheeses, asparagus, citrus-led cuisine and delicately spiced dishes.
