Viticulture & Winemaking
The estate is farmed biodynamically. Manual harvesting and meticulous fruit selection reflect a pursuit of precision and purity. Vinifications are natural, without sulfur or filtration, in tanks or concrete eggs, allowing the terroir to speak with clarity.
Aging lasts 12 to 18 months in demi-muids, large foudres or amphorae, refining the texture and highlighting the distinctive mineral tension of Palette.

Château Simone Rouge
