Weingut Van Volxem — The Majestic Renaissance of Saar Dry Riesling
Precision, purity & the historic soul of the Saar Valley
In the heart of Wiltingen, on the dramatic, steep slopes of the Saar, Weingut Van Volxem stands today as one of Europe’s truly great producers of dry Riesling. Founded on the grounds of a former Roman estate and celebrated since the 19th century as one of Prussia’s grand vineyards, the domaine once graced the finest tables of Europe.
Since 2000, under the visionary leadership of Roman Niewodniczanski, Van Volxem has undergone a remarkable revival: reclaiming historic sites, restoring ancient terraces, and applying a strict, artisanal philosophy that has propelled Saar Riesling back to global prominence.
Terroirs & Geology — The mythical slopes of the Saar
The estate farms some of Germany’s most celebrated and demanding vineyards, several classified as VDP.Grosse Lage:
- Scharzhofberger Pergentsknopp
- Ockfener Geisberg
- Wiltinger Gottesfuß
- Volz
Complemented by additional historic slopes such as Wawerner Goldberg, Saarburger Rausch and Wiltinger Braunfels.
Soils
An exceptional mosaic of metamorphic stones:
• Devonian slate
• Grauwacke
• Quartzite
• Extremely lean, rocky, fast-draining soils
Climate & Topography
Slopes exceeding 60%, cool nights, and south to south-east exposure give the Saar one of Europe’s slowest ripening climates, resulting in stable acidity, crystalline purity and a razor-sharp minerality — the essence of Saar Riesling.
Philosophy & Practices — Purity, verticality, transparency
Van Volxem follows a profoundly artisanal philosophy, guided by respect for the land and meticulous precision.
- manual work on extreme slopes;
- low yields and living soils;
- natural ground cover and biodiversity;
- hand harvesting exclusively;
- no herbicides or synthetic interventions.
In the cellar:
- spontaneous fermentations with native yeasts;
- long aging on fine lees;
- minimal fining, minimal filtration;
- a low-intervention approach focused on purity and precision.
The guiding principle: let stone, slope and light shape the wines — without artifice.
Wine Style — Crystalline tension & mineral depth
Van Volxem wines are defined by:
- pure aromatics — citrus, lime, white peach, fine herbs, warm stone;
- a vertical, incisive but perfectly integrated acidity;
- a precise, saline minerality emphasizing length;
- a crystalline texture — density without weight;
- a long, vibrant, mouthwatering finish;
- ageing potential of 15–30 years in top sites.
