He works with Chardonnay, Savagnin, Poulsard, Trousseau, Pinot Noir and several nearly forgotten ancient grape varieties, in a constant pursuit of purity, energy and emotion.
A cult Jura domaine where parcel-by-parcel precision, biodynamics and low-intervention vinification give birth to wines that are vibrant, free and deeply expressive. Ganevat embodies an artisanal vision of wine: crystalline whites, airy reds and cuvées of rare emotional intensity.
Terroir: Rotalier, La Combe and Jura marls
The vines, located around the hamlet of La Combe, grow on slopes of limestone, marl and clay, typical of the southern Jura. This geological diversity allows both Jura and Burgundian grape varieties to express mineral tension, fine salinity and remarkable depth.
Each parcel is worked with extreme care, then vinified separately in order to let the terroir speak fully. The whites reveal crystalline energy and saline length, while the reds express pure fruit, delicate texture and natural grace.

Biodynamic viticulture and respect for living soils
The vines are cultivated according to the principles of biodynamics, with deep respect for the soil. No herbicides and no synthetic chemicals are used: the work is manual, meticulous and demanding, with harvesting carried out exclusively by hand.
This approach aims to preserve soil life, the natural balance of the vine and the sincerity of each parcel’s expression. The domaine seeks living, intense and free wines, capable of transmitting the vibration of place without artifice.
Whites: lemon, pear, ripe apple, quince, white flowers, fresh almond, chalk, wet stone and saline notes.

Vinification and ageing
Fermentations take place naturally, without commercial yeasts, with little or no added sulphur depending on the vintage. The aim is to preserve the energy of the grapes, the transparency of the terroir and the natural tension of the wine.
Fermentation: natural, with indigenous yeasts and minimal intervention.
Ageing: old barrels, demi-muids or vats, often for several years.
Sulphur: very limited use, sometimes none depending on the cuvée and vintage.
Philosophy: allowing the wine to find its own balance, complexity and vibration.

His sister Anne Ganevat also collaborates on a négociant line of wines faithful to the same exacting standards. Since 2021, the domaine has been taken over by a Geneva-based investor, while preserving the philosophy and artisanal rigour associated with the Ganevat name.
