Philosophy and Winemaking
Boudignon works with low yields, manual harvests, and native yeast fermentations. No malolactic fermentation is carried out to preserve tension and precision. Aging takes place in large neutral oak barrels and demi-muids, ensuring texture without oak dominance.
Minimal intervention in the cellar allows the mineral backbone and pure fruit character to shine through.
