Viticulture is guided by observation, biological balance and careful respect for the environment. Soil work is limited and thoughtful, partial grass cover is managed with precision, and treatments are kept to the strict minimum.
Harvesting is done entirely by hand, followed by rigorous sorting to retain only the healthiest and most homogeneous berries.
In the cellar, each parcel is vinified separately to preserve its identity. Fermentations take place in oak barrels with a moderate use of new wood, never dominant. The élevage lasts 12 to 18 months, adapted to the personality of each cuvée.
