Domaine des Roches Neuves — The Vibrant Purity of Tuffeau by Thierry Germain

Domaine des Roches Neuves is one of the leading contemporary references in the Loire Valley. Based in Varrains, at the heart of the Saumur region, Thierry Germain has built a singular interpretation of tuffeau terroirs, producing wines of remarkable purity, energy and precision.

Originally from Bordeaux, Thierry Germain arrived in the Loire in the early 1990s and has since profoundly shaped the identity of Saumur and Saumur-Champigny. His approach is rooted in biodynamics, close observation of the vine, low-intervention vinification and a constant search for transparency. The wines do not seek demonstration, but rather the brightness of place, the freshness of fruit and the vibration of limestone.

The spirit of the domaine

A Loire style defined by precision, verticality and inner energy. Thierry Germain seeks living, chiselled and deeply transparent wines, where Cabernet Franc and Chenin Blanc become interpreters of tuffeau. The domaine’s signature is built on balanced ripeness, great finesse of extraction, discreet ageing and a freshness that carries the wines with clarity.

History: Thierry Germain and the contemporary rebirth of Saumur

Thierry Germain arrived in the Loire in 1991, leaving Bordeaux to settle in the Saumur region. He gradually took over Domaine des Roches Neuves and, vintage after vintage, built a new aesthetic around purity, biodynamics and a precise reading of terroir.

From an early stage, the domaine stood out for its desire to lighten the wines, preserve their natural energy and move away from over-extracted expressions of Cabernet Franc. Thierry Germain established a brighter, more vertical style, where tannins are powdery, fruit is more radiant and minerality is more clearly expressed.

This path has made the domaine one of the founding names of the contemporary Loire. Through his work on soils, old Cabernet Franc vines, Chenin grown on tuffeau and refined vinification, Thierry Germain has helped redefine the quality image of Saumur and Saumur-Champigny.

Terroirs: tuffeau as the backbone

The domaine now covers around 28 hectares, depending on the parcels farmed and the vintage, spread across a mosaic of approximately 61 parcels. This diversity allows for a fine reading of the different sectors of Saumur and Saumur-Champigny, with subtle variations in soil, exposure and tuffeau depth.

Tuffeau, the soft limestone emblematic of the Saumur region, forms the geological signature of the domaine. It gives the wines natural verticality, delicate salinity and deep freshness. The roots draw mineral energy from it, reflected in long, straight and often very chalky finishes.

The reds are made from Cabernet Franc, on the terroirs of Saumur-Champigny. The whites are made from Chenin Blanc, a grape variety capable of brilliantly expressing the tension, density and complexity of tuffeau. This dual red and white identity places Roches Neuves among the most complete domaines in the Saumur region.

Terroir expression: Saumur, Saumur-Champigny, Varrains, tuffeau, Cabernet Franc, Chenin Blanc, soft limestone, salinity, freshness, verticality and mineral energy.

Roches Neuves signature: biodynamics, parcel-based interpretation, indigenous yeasts, delicate extraction, precise ageing, limited sulphur and a constant search for aromatic transparency.

Viticulture: full biodynamics and observation of the living vine

The domaine is farmed according to a demanding organic and biodynamic approach. Thierry Germain works the vine as a living organism, paying close attention to soils, sap flow, plant vitality and the natural balance of each parcel.

Yields are deliberately limited and harvesting is carried out by hand. Each parcel is monitored precisely so that the harvest date can be adapted to its own identity. The aim is to obtain perfectly healthy grapes, ripe but never heavy, capable of producing wines that are deep, slender and vibrant.

Aromatic profile

Young Cabernet Franc: raspberry, redcurrant, red cherry, violet, peony, graphite, fine pepper, fresh herbs, chalk and a delicate smoky touch.

Mature Cabernet Franc: forest floor, blond tobacco, fine leather, truffle, dry leaf, candied red fruits, sweet spices and notes of damp tuffeau.

Chenin Blanc: lemon, yellow apple, pear, quince, white flowers, fine honey, wax, almond, wet stone, chalk and a long saline finish.

Overall impression: crystalline, straight and vibrant wines, with Loire freshness and immediately recognisable limestone depth.

Vinification: the art of purity

The cellar is conceived as the natural extension of the vineyard. Vinification relies on indigenous yeasts, delicate extraction and vessels chosen according to the identity of each cuvée: wooden vats, concrete, foudres, tronconic vats or amphorae.

Reds: precise vinification, gentle extraction, and a search for fine tannins, radiant fruit and natural freshness.

Whites: vinification focused on the tension, limestone density and saline length of Chenin.

Ageing: foudres, wooden vats, concrete or amphorae depending on the cuvée, with imperceptible oak influence and precise lees work.

Philosophy: limit unnecessary intervention, preserve the wine’s origin and accompany the expression of the vintage without embellishment.

Wine style

The wines of Domaine des Roches Neuves have an immediately recognisable identity: crystalline freshness, slender silhouette, silky texture, powdery tannins and mineral tension. The reds offer a very pure expression of Cabernet Franc, without vegetal heaviness or excessive extraction.

The whites, made from Chenin, stand out for their straightness, salinity and ability to combine density with brightness. The great cuvées often need a few years to fully reveal their complexity, but they always retain the vertical energy that defines the finest tuffeau terroirs.

Emblematic cuvées

Saumur-Champigny Les Mémoires: a cuvée from very old Cabernet Franc vines, often around a century old. Deep, chiselled and remarkably straight, with outstanding mineral length.

Saumur-Champigny La Marginale: a parcel-based selection of Cabernet Franc, denser and more structured, with strong ageing potential and refined texture.

Saumur-Champigny Franc de Pied: a rare cuvée from ungrafted vines, sought after for its aromatic purity, brightness and singular character.

Saumur Blanc L’Insolite: pure, straight and incisive Chenin, marked by freshness, mineral brightness and great precision.

Saumur Blanc Clos Romans: a great white wine from tuffeau, dense, luminous and saline, with remarkable depth and a long finish.

Saumur Blanc Clos de l’Échelier: Chenin from a great terroir, combining breadth, finesse and limestone tension.

Bulles de Roche: a delicate and precise sparkling wine, carried by Chenin, with fine bubbles, Loire freshness and fine energy.

Ageing and gastronomic pairings

The domaine’s great red cuvées, notably Les Mémoires, La Marginale and Franc de Pied, can evolve for 10 to 20 years depending on the vintage. The great Chenin wines, such as Clos Romans and Clos de l’Échelier, also have remarkable ageing potential.

The reds pair well with roast poultry, veal, lamb, duck, mushrooms, root vegetables, herb-led cuisine, lightly smoked dishes and Loire cheeses. The whites work beautifully with noble fish, scallops, shellfish, poultry in cream sauce, goat cheeses, citrus-led cuisine and white truffle dishes.
