Domaine Rossignol-Trapet — The Biodynamic Precision of Great Pinot Noir from Gevrey-Chambertin

Domaine Rossignol-Trapet is one of the important references of Gevrey-Chambertin, at the heart of the Côte de Nuits. Heir to two great Burgundian families, the domaine produces Pinot Noirs of great purity, where the depth of Gevrey’s terroirs is expressed with finesse, energy and precision.

Led by Nicolas and David Rossignol, the domaine has distinguished itself through an early and sincere commitment to biodynamics, certified since 2008. This approach gives rise to wines that are straight, vibrant and highly transparent, less marked by raw power than by balance, texture and a sensitive expression of each climat.

The spirit of the domaine

A living, precise Burgundy deeply attached to place. Rossignol-Trapet seeks fine, balanced and transparent Pinot Noirs, where biodynamics serves soil vitality and the readability of the terroirs. The domaine’s signature rests on gentle extraction, discreet ageing, silky tannins and natural freshness that extends the palate.

History: the Rossignol and Trapet heritage

The domaine was created in 1990, following the separation of the Domaine Trapet holdings. It brings together the history of two emblematic families: the Rossignol family, long associated with Volnay, and the Trapet family, deeply rooted in Gevrey-Chambertin.

Under the direction of Nicolas and David Rossignol, the domaine gradually developed its own identity, centred on fruit purity, precise vinification and respect for the great terroirs of the Côte de Nuits. The choice of biodynamics, officially certified in 2008, marked a decisive step in this evolution.

Today, Rossignol-Trapet is recognised for a finer and more luminous interpretation of Gevrey-Chambertin. The wines preserve the natural depth of the appellation, but in a register of delicacy, freshness and tactile precision.

Terroirs: Gevrey-Chambertin, premiers crus and grands crus

The domaine farms around 13 to 14 hectares, depending on the parcels worked and the vintage. Most of the vineyard holdings are located in Gevrey-Chambertin, complemented by a few parcels in the Côte de Beaune, notably in Beaune and Savigny-lès-Beaune.

The domaine owns a remarkable grand cru patrimony, with Chambertin, Latricières-Chambertin and Chapelle-Chambertin. These climats offer three very different readings of Gevrey: the sovereign depth of Chambertin, the mineral tension of Latricières and the more delicate grace of Chapelle.

The premiers crus, notably Petite Chapelle, Cherbaudes, Clos Prieur and Les Corbeaux, complete this picture with expressions that can be more floral, spicier or more immediately accessible depending on the site. The village and old-vine cuvées also reveal the finesse of the Rossignol-Trapet style through wines that are more open yet always precise.

Terroir expression: Gevrey-Chambertin, Chambertin, Latricières-Chambertin, Chapelle-Chambertin, Petite Chapelle, Cherbaudes, Clos Prieur, Pinot Noir, clay-limestone, freshness and minerality.

Rossignol-Trapet signature: certified biodynamics, indigenous yeasts, gentle extraction, limited new oak, fine tannins, aromatic purity and precise reading of the climats.

Viticulture: biodynamics and soil vitality

Rossignol-Trapet is among the Burgundian domaines that have made biodynamics a genuine tool for reading terroir. Organic and biodynamic certification, obtained in 2008, confirms work begun several years earlier: soil observation, biodynamic preparations, limited inputs and the search for natural vine balance.

Harvesting is carried out by hand, with rigorous sorting. The aim is to pick healthy, ripe but never excessive grapes, capable of producing expressive wines without losing freshness or aromatic finesse. Biodynamics is not used as a decorative claim, but as a viticultural conviction in service of precision.

Aromatic profile

Youth: red cherry, raspberry, redcurrant, sour cherry, violet, peony, sweet spices, fine pepper, liquorice, fresh earth and wet stone.

Evolution: forest floor, black tea, fine leather, truffle, noble mushroom, candied red fruits, dry spices, blond tobacco and autumn leaf notes.

Texture: fine and slender palate, silky tannins, measured extraction, natural freshness and a long finish, often mineral.

Overall impression: Gevrey Pinot Noirs that are deep but never heavy, marked by purity, finesse and living energy.

Vinification: gentle extraction and measured ageing

In the cellar, fermentations take place with indigenous yeasts. The proportion of whole clusters varies according to the cuvée and the vintage, in order to respect the balance of each wine. Extractions remain gentle, with a clear desire to preserve texture, freshness and fruit precision.

Fermentation: indigenous yeasts, low-intervention vinification and adaptation to each climat.

Extraction: gentle work, seeking fine tannins, pure fruit and elegant texture.

Ageing: around 12 to 18 months in oak barrels, with a moderate proportion of new oak depending on the appellation level.

Philosophy: never force the wine, but accompany the expression of terroir in a pure, living and refined style.

Wine style

The wines of Domaine Rossignol-Trapet stand out for their finesse, aromatic clarity and tactile elegance. They possess the structure of Gevrey-Chambertin, but without hardness or heaviness. The tannins are generally fine, the red and black fruits remain precise, and the finish retains fine tension.

The grands crus offer greater depth and strong ageing potential, while the premiers crus and village wines are often more accessible in youth. With time, the wines develop nuances of forest floor, spice, tea, truffle and dried flowers, while retaining a very Burgundian elegance.

Emblematic cuvées

Chambertin Grand Cru: the summit of the domaine, a deep, noble and structured wine, marked by density, length and great ageing capacity.

Latricières-Chambertin Grand Cru: a more taut, fresh and mineral expression, with a straight frame, saline energy and great precision.

Chapelle-Chambertin Grand Cru: a refined and delicate grand cru, often more floral, supple and spicy, with remarkable elegance.

Gevrey-Chambertin 1er Cru Petite Chapelle: a fine, floral and precise premier cru, located in the continuation of the grands crus, with beautiful aromatic purity.

Gevrey-Chambertin 1er Cru Cherbaudes: a fleshier and more expressive cuvée, marked by black cherry, sweet spices and elegant depth.

Gevrey-Chambertin Vieilles Vignes: a characterful village cuvée from old vines, combining ripe fruit, Gevrey typicity and supple structure.

Bourgogne Rouge & Côte de Beaune cuvées: more accessible wines, yet always marked by fruit precision, freshness and finesse of extraction.

Ageing and gastronomic pairings

Rossignol-Trapet’s grands crus can evolve for 15 to 30 years depending on the vintage, with a strong ability to gain aromatic complexity. The premiers crus often age well for 8 to 20 years, while the village wines can be enjoyed earlier yet still retain fine cellaring potential.

At the table, these Pinot Noirs pair beautifully with roast poultry, duck, veal, lamb, fine game, mushrooms, truffle dishes, herb-led cuisine, mature cheeses and refined Burgundian dishes. Their fine tannic structure makes them particularly suited to precise, savoury and not overly heavy cuisine.
