Established in Savigny-lès-Beaune at the end of the 19th century, Domaine Simon Bize & Fils embodies a Burgundy of discretion, precision and authenticity. Founded around 1880, the estate has been passed down through generations with a profound respect for its terroirs and a philosophy of family continuity.

The arrival of Patrick Bize in 1972 marked a decisive evolution: refined parcel-based understanding, meticulous vinifications, expanded cellars, and a stylistic signature defined by finesse and purity. After his passing in 2013, his wife Chisa Bize, his sister Marielle and the estate’s long-standing team have carried forward his vision with exemplary rigor.

Today, the domaine stands as one of the most respected names in Savigny-lès-Beaune, admired for the quiet depth of its wines and its unwavering fidelity to the spirit of the village.

The domaine extends over 22–25 hectares, mainly in Savigny-lès-Beaune, with a selection of parcels in neighbouring villages.

Philosophy & Vineyard Practices

The estate works with an approach very close to organic farming, without seeking certification:

  • no herbicides,
  • regular ploughing,
  • careful observation of natural balances,
  • controlled yields,
  • 100% manual harvesting.

The priority is soil life and plant health. The aim is not to impose a style, but to allow each terroir to speak freely and truthfully.

Vinification & Aging

Red Wines

  • frequent use of whole clusters, depending on cuvée and vintage,
  • spontaneous fermentations,
  • gentle extractions prioritising finesse,
  • about 12 months aging in barrel with very little new oak (10–20% max),
  • bottling without fining or filtration for most cuvées.
